Let's have a truth talk for a moment. We are all getting older, and life isn't always all fun and games. There are plenty of pros to growing up - such as a secure job, having a general idea of what you're doing with your life, money in the bank, and if you're lucky, a life partner to enjoy special moments with you.

There are the cons too - bills, taxes, and no longer having the ability to go out on a Friday - alright - really any night of the week like you did in your twenties.

Remember those days? Remember planning weeks in advance for the fun that was going to be had because it was St. Patrick's Day or Cinco de Mayo? I sure do, but those days are gone.

Sort of. I still like to enjoy the festive holidays but on a much smaller scale - such as at home with dinner for two and cocktail or two before the night is over. I'm certainly not one to give up a chance to cook up a Mexican food feast, and I haven't met a margarita I did like, but there's that getting old thing again.

It seems margaritas aren't liking me much these days - pretty sure it's the combination of all that citrus and tequila. This is where the fruity tequila smash comes into play. Think of it as the cousin to my beloved bourbon smash, and Margarita's smarter older sister.

What I love about this raspberry mint tequila smash is that you can really make it to your liking. Want more fruit? Muddle in some more raspberries. A little sweeter? You know what to do! Same with making it stronger or just a touch less alcohol. There are no strict rules to follow here, just make it up as your mood goes. 

Raspberry Mint Tequila Smash Recipe

Ingredients

  • 10 mint leaves
  • 8 fresh raspberries
  • 1/2 ounce agave syrup
  • 1 lime, juiced
  • 2 ounces silver tequila
For Garnish:
  • mint
  • fresh raspberries
  • lime wedge

Directions

  1. Muddle the mint, raspberries, agave and lime juice together in a rocks glass until the raspberries are broken up and their juices are released.
  2. Stir in the tequila and top with crushed ice.
  3. Garnish with mint sprigs, raspberries and a wedge of lime before serving.

Fried Almonds with Thyme

This is a post I've been meaning to share; I've been sitting on it for quite some time now. I originally made these fried almonds with thyme last year for Mother's Day. They were to go alongside some grilled garlic shrimp for some tapas-style snacks and appetizers we had that day.

They were such a hit I've been making them for parties and get-togethers ever since. These almonds are incredibly easy to make. You can have them ready to eat in less then 10 minutes which makes them perfect for last minute snacks when the munchies hit, or when you've got some unexpected visitors.

I prefer making these fried almonds with thyme, but if you don't love thyme, you could really use whatever herb you like. You could even skip the herbs altogether and experiment with different spices like cinnamon, smoked paprika, or even cayenne.

Sometimes I like to add a little bit of garlic powder or just use garlic salt. The garlic gives it such a nice flavor. If you're a garlic lover like me, you'll probably love that version. Just make sure your date eats them too, so you can cancel each other's dragon breath out!

I'm currently in the middle of doing Whole30, so I've found these almonds to be a nice little snack when I need one. Not only are they made with Whole30-approved ingredients, but they're also Paleo, gluten free, dairy free, vegetarian, and vegan.

This is one flavor-packed snack that you can feed to almost anyone, unless they have a nut allergy. Don't be the person giving nuts to someone with a nut allergy! I actually did that once by accident – my bad. Now I like to let everyone and anyone know when something has nuts in it.

In this case, this dish is clearly all about the nuts – delicious, toasty fried almonds with thyme. Enjoy!

Fried Almonds with Thyme Recipe

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 cups whole raw almonds
  • 1 teaspoon fine sea salt
  • 1-2 tablespoons fresh thyme, chopped, to taste

Directions

  1. Heat the oil in a skillet over medium heat. Add the almonds and stir to coat with the oil. Cook for 2-5 minutes or until the almonds are hot and toasted.
  2. Transfer the almonds to a bowl and toss with the salt and thyme, use 1-2 tablespoons of the thyme, depending on your personal taste.
  3. Serve the almonds immediately or store in an airtight container.
