Paleo Pumpkin Lava Cakes Recipe

Ingredients

  • 3 tablespoons Natural Almond Butter
  • 1 tablespoon Coconut Oil, + additional for the ramekins
  • 1 Egg
  • 1 Egg Yolk
  • 1/4 cup Canned Pumpkin
  • 1/4 cup Coconut Sugar
  • 1/4 teaspoon Pure Vanilla Extract
  • pinch of Salt
  • 2 tablespoons Almond Flour, packed + additional for dusting
  • 1 1/2 teaspoons Coconut Flour, packed
  • 3/4 teaspoon Pumpkin Pie Spice

Directions

  1. Preheat your oven to 400°F. Rub 2 Ramekins (mine are 5 oz each) with coconut oil and sprinkle with almond flour so that the inside is fully covered. Set aside.
  2. In a large microwave safe bowl, melt the almond butter and coconut oil until smooth.
  3. While the oil/almond butter melts, beat together the egg, egg yolk, pumpkin, coconut sugar, vanilla extract and salt, using an electric hand mixer, until the mixture lightens in color and the coconut sugar begins to break down, about 2 minutes.
  4. Pour the egg mixture into the oil/almond butter mixture, whisking constantly by hand until everything is mixed. Gently whisk in the almond flour, coconut flour and pumpkin pie spice until well mixed.
  5. Divide the batter between the ramekins, filling just over 3/4 of the way full.
  6. Place in the oven and bake until the outside is set, but a small spot in the center looks soft and under-cooked, about 13-14 minutes.
  7. Remove from the oven at let stand one minute. Then, gently run a knife along the outside of the ramekin and place a plate upside down on top. Gently turn the plate/ramekin over and the cake will slide right out.
  8. DEVOUR immediately!

Instant Pot Gluten Free Teriyaki Meatloaf Recipe

Ingredients

  • 1 cup Gluten Free Breadcrumbs, (see note)
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Ground Ginger
  • 2 pounds Ground Beef
  • 1/2 cup Tamari Gluten Free Soy Sauce, or Coconut Aminos
  • 2 Eggs
For Teriyaki Glaze (Optional):
  • 4 tablespoons Tamari Gluten Free Soy Sauce
  • 1 1/2 teaspoons Rice Wine Vinegar
  • 1 tablespoon Brown Sugar
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Garlic Powder
  • 1/2 teaspoon Cornstarch

Directions

  1. In a large bowl mix the gluten free bread crumbs, onion powder, garlic powder, and ginger until combined.
  2. Add the ground beef, gluten free soy sauce and eggs. Gently mix until combined.
  3. Divide the mixture in half and form it into 2 loaves (each approximate the size of your hand) on a piece of aluminum foil shaped into a sling that will fit into your Instant Pot. To get both meatloaves to fit, you'll have to shape them into slightly taller and skinnier loaves.
  4. Pour one cup of water in the bottom of your Instant Pot. Place the trivet in your Instant Pot and rest the aluminum foil sling and meatloaves on top of it. Seal and pressure cook on High pressure for 20 minutes. Do a quick release, and once the steam subsides unlock your Instant Pot.
  5. Drain off any water that collected in the aluminum foil and brush the meatloaf with gluten free teriyaki glaze. If desired, place the meatloaf (still on the foil) on a baking sheet and let the sauce caramelize under the broiler for 2-3 minutes.

To Make the Optional Teriyaki Glaze:

  1. Whisk gluten free soy sauce, rice wine vinegar, brown sugar, ground ginger, garlic powder, and cornstarch together.
  2. Heat by whisking in a saucepan over medium heat or by heating in the microwave in 30 second intervals until slightly thickened.

 

Notes

  • Instead of gluten free breadcrumbs, you can use 1 cup of crushed gluten free rice cereal, like Rice Chex or a gluten free crisp rice cereal (I like the one made by Malt O Meal).
