Valentine's Day is behind us and now it's time to think spring. When I think of spring and summer, immediately my mind goes to the garden. This year we are planting a garden again after a year break.

Last year was a good break from the garden for us, but I am so anxious to have my own produce again. I'm also anxious to have fresh strawberries growing in my own backyard too.

I am hoping to make a lot of home grown meals this summer, between raising chickens now and hopefully getting several eggs, to having all our own produce too. Now, the best parts, though are those juicy strawberries that I can just walk outside and pick, or for us, it usually means our kids will be out there picking them. They really enjoy that, until they see a bug… what can I say, they are definitely my kids.

I decided to try a delicious strawberry sauce for angel food cake over the weekend that I'm even more anxious to make again with fresh strawberries this summer. This sauce can be used over angel food cake or over an ice cream sundae too, even shortcake. Is your mouth watering yet? Mine is!

This recipe is so simple, all you need are strawberries, sugar, a little bit of cornstarch, vanilla, and of course some water. This is actually a sauce that would be good to have your kids make alongside of you, assuming they are old enough.

It's a good recipe to learn because you can make a variety of recipes out of it, for instance blueberry sauce. I'll have fresh blueberries and blackberries this summer too. I may just need to have a party; don't you think?

One thing that will come in very handy for this is to use a mesh strainer once you have your sauce boiled well, it will allow you to get all the juice out without extra seeds.

Strawberry Sauce for Angel Food Cake Recipe

Ingredients

  • 2 cups strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 1/4 teaspoon pure vanilla extract
  • 1/2 cup water
  • gluten free angel food cake, or any angel food cake

Directions

  1. Place the hulled and sliced strawberries into a medium-sized saucepan.
  2. Warm up to medium-high heat.
  3. Add in the granulated sugar, cornstarch, vanilla, and water.
  4. Let them heat up to a boil for about 5 minutes until nice and soft.
  5. Once they are boiled, remove from the heat and mash them well.
  6. Using a mesh strainer over a bowl, or mixing glass, pour the strawberries into the strainer. Press the strawberries with a spoon to strain the sauce out.
  7. Once that is complete, the strawberries in the strainer can be discarded or you can use them for a chunkier sauce.
  8. Serve the sauce over prepared angel food cake.

The other day I got to thinking about how certain recipes come to be. Take this baked goat cheese with harissa, for example. I am often inspired by flavor combinations that I see in restaurants, but occasionally one particular ingredient will grab me by the shoulders, shake me, and command me to pay attention. Recently, that ingredient was harissa. And boy, am I paying attention. 
I had seen harissa floating around the internet in recipes and just simply had never tried it. It sounded tasty enough, a sauce or paste from North Africa made with chili peppers and spices. What could be bad, right? It's just that I had never been put in a situation where I really needed to try it. 
Well, I was cooking from a new cookbook and in one of the recipes, it called for harissa. Harissa!! Finally, a good solid excuse to try this out. I knew that recipes for homemade harissa are around, but for the sake of simplicity, I picked up a jarred version from the grocery store to try it out.

I have found that there is a range of spice levels when it comes to harissa. I love a spicy sauce, but for this particular recipe, I chose a mild jarred version found at my grocery store. It is made up of primarily roasted red peppers and some spices. 
Now, just about a month later, I can't even remember what the rest of the recipe was about that featured harissa, but that seriously does not matter. After one bite my eyes were open and my life, or at least my dinner table, has not been the same since. 
The layers of flavor with both sweet and spicy elements are just a refreshing change for the typical tomato-based sauces. This stuff is a rock star in the kitchen, and I am not even trying to hold myself back from its power. Harissa is here to stay!

After trying all sorts of meals with a bit of harissa, I got to thinking something bubbly and cheesy would only be made even more delicious by a dollop of harissa. I was not wrong. Baked goat cheese with harissa was born. 
This recipe is very easy to prepare, just a combination of cream cheese and goat cheese in a baking dish, surrounded by a moat of Harissa and some chopped grape tomatoes. Bake it until the cheese is soft and dippable, and serve it up with a generous amount of toasted bread. Make it on a special occasion or just a Tuesday. Whatever comes first. It's seriously that good.

Baked Goat Cheese with Harissa Recipe

Ingredients

  • 11 ounces goat cheese, softened
  • 8 ounces cream cheese, softened
  • 1 cup harissa sauce, jarred, many spice levels available – mild used in this recipe
  • 1 cup grape tomatoes, quartered
  • 2 tablespoons fresh cilantro, minced
  • 2 tablespoons fresh parsley, minced
  • kosher salt, to taste
  • black pepper, to taste
  • 1 french baguette, thinly sliced on the diagonal

Directions

  1. Preheat oven to 350°F. 
  2. In a medium size bowl, stir together goat cheese and cream cheese. 
  3. Spread mixture in the center of a small baking dish or 8-inch cast iron skillet. Spoon Harissa around the edges of the cheese and top with the tomatoes. 
  4. Bake cheese for 15-20 minutes or until hot and soft. The Harissa will be fragrant and bubbling. Remove cheese from oven and sprinkle with herbs, a pinch of kosher salt, and pepper. Keep warm. 
  5. Turn on broiler. Line sliced bread onto a baking sheet and place under broiler for about 1 minute or until toasted. Watch carefully as to not burn. Serve toasted bread with baked goat cheese.
