Spring is finally in full swing here in Ohio and I feel like it's time to get a bit radishy. That's right, radishy. Radishes are such funny little things. They're so bright and beautiful, but they have this surprising pepper-y-ness (is that a word?) that I can't get enough of. I think radishes are one of those polarizing foods. You either love them... or really, really don't. I happen to love them. My husband? Not so much. But here's the thing. While there's really no love lost between my husband and radishes, he actually loved this Feta Radish Dip! True, the fact that he loves feta cheese definitely helps the cause. After making the first test batch, we stood at the counter and ate, and ate, and ate this stuff. In full disclosure, I did make the mistake of salting my first batch, which was really unnecessary due to the saltiness of the feta. So you can note that I left salt out of the ingredient list. That was no accident. If you're like me, you want to make sure everything is seasoned, but I'm telling you, this needs no extra salt. The cheese is perfect all on its own. Then, when the feta is mixed with creamy greek yogurt and a touch of sweet honey, it turns into a lovely and unique spring dip.
