The recipe begins by roasting Plum (or Roma) tomatoes.  They are tossed with olive oil, seasoning, garlic and herbs.  After about an hour in the oven the tomatoes have some color and the flavors have intensified.

This recipe is a standout because of the creative combination of roasted tomatoes and fresh tomatoes.  Roasting really dials up the intensity of the tomato, while keeping some raw maintains the garden fresh flavor.  The addition of roasted red peppers, Kalamata olives, herbs, and red pepper flakes, adds a color, texture and a bit of heat.
