How To Make Strawberry Thyme Jam, As Told By Cats

Summer berries are waning — which means it's your duty to make lots and lots of delicious jam. Last year Marisa McClellan shared her recipe for strawberry thyme jam with us, and I thought it was worth revisiting as we talk about canning and preserving. This time, however, cats will show us the way because they obviously know what's up. 

STEP 1: Go To The Grocery Store And Get Some Stuff

Your shopping list: 

  • 1 quart strawberries (approximately 3 cups chopped)
  • 1 cup honey (12 ounces)
  • 5 to 6 sprigs thyme
  • Juice of 1/2 lemon

Step 2: Put All The Stuff In A Bowl And Stir

Chop berries and place them in a bowl. Add honey and stir. Strip thyme leaves off branches and add them to the strawberries and honey. Stir to combine.

Step 3:Take A Couple Minutes To Lick Your Fur

Bonus points if you get your friend to do it for you. 

Step 4: Put Stuff In Pan

Make sure to wear your cutest apron. When honey has dissolved and the strawberries are quite juicy, scrape the mixture into your pan.

Step 5: Put Stuff Over Heat And Take A Quick Cat Nap

Bring to a bubble and cook over high heat for 8 to 12 minutes, until the jam is thick and sticky.

Step 6: Put The Stuff In Jars

Funnel jam into two prepared half pint jars and process in a small water bath canner for 10 minutes.

Step 7: Make Sure The Stuff Is Cold And Sealed

When time is up, remove jars from canner and let them cool on a folded kitchen towel. When they're cool enough to handle, remove the rings and check seals. Any unsealed jars should be refrigerated and eaten promptly. Sealed jars can be stored in a cool, dark place for up to one year.
