Mustard Mashed Potatoes

Have you been following along with "Mashed Potato Month?"   It's Tuesday and that means it's time for another recipe idea!

We so often think about mashed potatoes with our Thanksgiving turkey dinner, but I think this recipe could be used along side a variety of meals year-round.  These "Mustard Mashed Potatoes" would taste great with a holiday ham in the winter or with grilled pork in the summer.

The idea is simple – make a batch of "perfect mashed potatoes" and add 2 tablespoons of mustard!   This recipe serves four, so it is ideal for any night of the week year-round.  (Why wait for Thanksgiving!)

I like to use a Whole Grain Dijon mustard (my favorite is from Maille).  The flavor is incredible and I love the look of the mustard grains throughout the potatoes.

However, you can feel free to get creative and use your favorite mustard!  Next time I might try a bit of Hot Chinese Mustard and see if I can take the heat!
