Indoor Smores: Roasty, Toasty Goodness

Oh, hi there. I don't want to alarm anyone or anything, but I've gone and done something ridiculous again.

I made s'mores. In the house. I did them up right, too. I roasted the marshmallows in the oven, I used a big ol' box of Golden Grahams cereal, and I loaded them up with chocolate chips. Sounds easy? That's because they are!

Have I mentioned to you guys that my dad had never tasted a s'mores until I was an adult and shoved one in his face and demanded that he eat it right that second. He wasn't even all that impressed which is just more proof that he isn't even human. The man doesn't like chocolate and peanut butter together either, so yeah. Double proof. Someone call a doctor or a scientist or something. He needs some tests ran. Somethin' ain't right.

So, back to the s'mores bars that my dad did not eat because he is a fuh-reak. These were the perfect cold weather, wishing we could have a bonfire, really want to go camping but hate nature, let's eat something that is full of sugar treat. You need these in your life!

So, let me break this down for you. These are basically a rice krispie treat without all of the silly rice krispies. I mean, no offense little elf guys, but Golden Grahams cereal is way better. I didn't want to just melt the marshmallows like you would in a normal gooey bar treat like this, though. I wanted to bring a little bit of that freshly roasted marshmallow taste to these bars and I did that with my broiler.

You could also use a kitchen torch or just skip the roasting altogether if you're extra lazy and don't like your marshmallows a little crispy. I also snuck in some mini marshmallows towards the end so that they wouldn't melt into the bars. Nothing better than taking a big bite of marshmallow, am I right?

Now, hop on in the kitchen and get these in yo' face. Just don't forget to use up the rest of bag of mini marshmallows on these Peanut Butter Marshmallow Brownies. It'd be a shame to let them go to waste, after all. And when it's warm enough outside, you could also give David's grilled s'mores a try.

Ingredients

  • 8 cups golden grahams cereal
  • 4 tablespoons butter
  • 1 bag marshmallows, about 40 full size marshmallows
  • 1 cup miniature marshmallows
  • 1 1/2 cups milk chocolate chips

Directions

  1. Place marshmallows in a single layer on a parchment lined baking sheet. Place in the oven under the broiler and broil about 5 minutes, watching constantly, just until the marshmallows turn golden brown. You may need to move your pan around to get all of the marshmallows directly under the broiler depending on your oven. 
  2. Remove from the oven and set aside.
  3. In a large sauce pan, heat the butter over low heat until fully melted. Add the roasted marshmallows to the pot and stir with a wooden spoon until the marshmallows are completely melted. Turn off the heat.
  4. Add the cereal to the pan and stir to coat in the marshmallow mixture. When cereal is fully coated, stir in the mini marshmallows and chocolate chips. Stir again to distribute.
  5. Press the cereal mixture into a parchment lined 9x13 baking dish and let sit until completely cooled and firm. Cut into bars and serve.
