Today I was in the mood for a cookie…but not just any cookie. I wanted to try something new.
The first place I thought to look was a fabulous cookbook by fellow food blogger and recipe contester, Anna Ginsberg. Her book, "The Daily Cookie: 365 Tempting Treats for the Sweetest Year of Your Life" has something for everyone. There are drop cookies, cut-out cookies, bar cookies…everything!
After flipping through the pages, one recipe just kept calling my name: Banana Pudding Cookies.

I am a HUGE fan of Banana Pudding and these cookies sounded so creative and original! I just had to make a batch.
There is a box of banana pudding mix in the batter, which lends itself to a wonderful cake-like texture in every bite. Pieces of white baking chocolate and broken vanilla wafter cookies are also mixed in to mirror the banana pudding flavors.
The cookies were insanely delicious and absolutely addictive. This recipe is a great way to bring banana pudding to a party or a potluck without having to worry about a refrigerator. Give them a try, I promise they will soon have a permanent home in your go-to cookie recipe file!
