Scrambled Eggs with Spinach & Parmesan

I needed something for "morning after" guests whenever they made it to the kitchen. I made a big batch of the eggs and put a bowl of each the spinach and cheese along side. As each guest awoke, I could VERY QUICKLY make them a delicious breakfast, hot out of the skillet. Perfect - served with whole wheat toast, coffee and fresh OJ. Simple, easily scaled up and delicious. This is going on the regular breakfast rotation!
