Valentine's Day is one holiday that I like to celebrate at home. Whether you are making breakfast for your better half, children or friends, buttermilk waffles with glazed strawberries are a perfect way to pamper the ones you care about on a special morning. Pair it with a Nutella latte and your day is off to a very sweet start.
Many years ago, my husband and I decided to get a baby sitter so we could go out for a Valentine's dinner. Boy, was that a mistake. Our dinner reservations were at eight o'clock. We were finally seated at 9:30 and our main courses arrived at our table at ten thirty. We needed to be home by eleven so we had our dinners packed up to eat after we drove the babysitter home. It was a memorable evening but not in a good way. Ever since then, I have insisted on celebrating at home whether it's with breakfast, lunch or dinner. We can always have a meal at a restaurant on another day that week when things are not as a crowded. I have never been a fan of the special Valentine's Day menus anyway.
My son's favorite meal is breakfast so for Valentine's Day, I will surprise him and serve these waffles for dinner. What kid wouldn't want waffles with strawberries and whipped cream for dinner? To make these waffles a little lighter, I used low fat buttermilk, half whole wheat flour and canola oil. They are as light and crispy as you can get them. My little secret is adding some club soda to the batter.
I have owned a heart shape waffle maker for almost 20 years. Even though it looks a little beat up, I can't get myself to buy a new waffle maker when I have one that works perfectly and makes the cutest little heart waffles. These waffles are a real treat for Valentine's Day but my kids love heart shaped waffles all year round.

Strawberry Waffles Recipe
Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon sugar
- 1 cup buttermilk
- 1 large egg, beaten
- 2 tablespoons canola oil
- 1/2 teaspoon vanilla extract
- 1/4 cup club soda
- 1 tablespoon butter
- 2 cups strawberries, cored and halved
- 1/4 cup granulated sugar
- whipped cream
Directions
- Combine flours, salt, baking soda, baking powder and sugar in a medium bowl, stirring with a spoon.
- Whisk together buttermilk, egg, canola oil, vanilla and club soda in a small bowl. Mix well.
- Add buttermilk milk mixture to flour mixture slowly, stirring until just blended.
- Preheat a waffle iron and coat with cooking spray. Spoon about 1/4 of the batter onto waffle iron and cook for about 3 to 4 minutes or until done. Repeat with remaining batter.
- While waffles are cooking, melt butter in a medium saucepan. Add strawberries and sugar to pan. Mix well and cook for five minutes or until strawberries are soft and the sugar turns into a syrup.
- Serve waffles topped with strawberries and whipped cream.
