Buttered Spinach with Vinegar

Excellent, simple and pretty. Would be great as a side suitable for company,but also worked for us as part of a vegetarian main (paired with Canal House Lentils). I used regular spinach since my Dad always said it had better taste, but don't doubt it would be great with baby, too. This recipe makes a strong argument for simplicity in cooking with its 3 ingredients and mammoth flavor.
