Crispy Bacon Wrapped Dates

I blame my Jewish upbringing for my love of bacon. It wasn't forbidden but it was only to be eaten outside of my Kosher house. At hockey tournaments as a kid, I would make a beeline to the buffet breakfast and load up. There were always eggs, but the majority of the plate was bacon. We're not talking just any kind of bacon, but crispy bacon. Yes, I was that kid with the tongs seeking out the crispy pieces that tend to hide in the bottom of the hotel pan!

Now that I can have it whenever I choose, I choose to have it often and in a variety of ways! Let's be honest, bacon makes everything better. It can be candied and added to a salad, it can be added with cheese to make roasted potatoes even more awesome, or it can turn into a swizzle stick and used as a garnish.

For now, I wanted to keep it simple. As a bachelor, I can get away with a relatively sparse fridge, but I use it to my advantage. I often put myself to the test with Iron Chef challenges to see what I can come up with. But in this case, the decision was an easy one. I took two wonderful ingredients and wanted to elevate both of them! The answer was wrapping bacon around something as simple as a date to make the perfect appetizer.

Two ingredients, very little fuss and within 15 minutes, crispy bacon wrapped dates are within your reach and in your mouth! It's an appetizer that is easy to prepare but has an aura of sophistication to it. You can make as few as you want or as many fit on your baking sheet without spending much more time preparing it.

Crispy bacon wrapped dates is just more proof that bacon makes everything better.

Ingredients

  • 24 medjool dates, roughly 3/4 pound
  • 12 slices bacon, cut in half

Directions

  1. Preheat oven to 425°F
  2. Cover a baking sheet with tin foil
  3. Cut bacon in half
  4. Make a small incision in the date and remove the pit
  5. Wrap a piece of bacon tightly around a date
  6. Place the wrapped date on the sheet and push down gently so it won't unravel
  7. Repeat steps 5 and 6 until all the dates are wrapped
  8. Bake at 425°F for 5 minutes
  9. With tongs, turn over the dates and bake for an additional 5 minutes
  10. Remove from oven once the bacon is browned and crispy.
  11. Serve immediately and enjoy!
