Well folks, it looks like we have survived the winter. All we have ahead of us is blue skies, green grass, and sunny days. Let's head outside for a picnic, shall we?

I'm a bit of a picnic fanatic. During the springtime, I will jump at any chance to pack up a meal and eat outside. Food just tastes better outside. Sure, it takes a little planning to pack a picnic, but I'm going to talk you through it.

Next step: plan your menu. I suggest starting your picnic with a light cheese course, because spreading cheese on crackers while bathing in the sun is the definition of true relaxation. The main course should be something that tastes fantastic at room temperature, like my Sweet Tea Oven-Fried Chicken. Add a light salad on the side, like this broccoli slaw.

I love this sweet and salty broccoli slaw for a picnic because it's sturdy enough to hold up to being dressed ahead of time. In fact, it tastes best if you make it a day or two in advance.

 Don't forget dessert on your picnic! These peanut butter cookies from Erin or Chocolate Chip Cookie Bars from Lisa fit the bill nicely. On your way out the door, grab a cozy blanket to sit on and a nice bottle of dry Prosecco. A picnic without booze is just grilling. Don't forget the wine!

Ingredients

  • 1 head broccoli, washed
  • 1/3 cup slivered almonds, toasted
  • 1/4 cup raisins, or dried cranberries
  • 1/4 medium red onion
  • 1/3 cup olive oil mayonnaise
  • 2 teaspoons granulated sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder, optional

Directions

  1. First, peel the onion and place it in the bowl of a food processor.  Pulse it until finely minced.  You should end up with about 1/3 cup of minced red onion.  Scrape the onion into a large bowl, and place the food processor bowl back on the machine (no need to clean the bowl).
  2. Next, prep the broccoli by chopping off most of the stem, except the last 4".  Roughly chop it into pieces, and place the pieces into the bowl of a food processor.  Pulse the broccoli for a few seconds to break it up.  It's okay if some larger pieces remain, we're not aiming for perfection.  Scrape the broccoli into the bowl with the red onion.  Next, stir in the almonds and raisins.
  3. In a small bowl, combine the mayonnaise, sugar, vinegar, milk, salt, pepper and garlic powder.  Whisk very well to dissolve the sugar.  Pour this over the broccoli mixture and stir. 
  4. You can serve this right away, but it tastes best if allowed to sit in the fridge for a few hours first.
