Palmiers or "Elephant Ears" are easy and elegant cookies that are made with only two ingredients! They are the perfect light snack in the afternoon with a cup of tea, or as a sweet treat at the end of a meal.

All you need to make these gorgeous cookies are frozen puff pastry dough and sugar – that's it! Begin my thawing the puff pastry sheets according to the directions on the package. The dough needs to be thawed properly or you will have difficulty rolling it properly.
Then all you have to do is sprinkle sugar on both sides of the dough and lightly press it in with a rolling pin. Roll up the sides into the signature coiled shape until it forms a long log roll. Cover in plastic wrap and refrigerate the dough for about an hour. Then slice into 1/2 inch pieces and bake. That's it!
After about 10 minutes in the oven they will be a light golden brown and you will have a stunning treat!
