When I think of summer, my mind wanders to warm waters, sandy beaches with my toes dug in, and a big coconut with a straw. Granted, I have never actually experienced this combination, but a girl can dream. In lieu of this tropical paradise, my dreams turn to food, as they often do, and I can pretend I'm there thanks to the tropical taste of coconut in my own kitchen.
Whether I mix coconut into soup or enjoy it in a dessert, there isn't anything else quite like the coconut. I love that we enjoy coconut water, coconut milk, and coconut flesh (and of course we can't forget coconut bras!). It seems that coconut is having a resurgence in the food world, and we've expanded far beyond the tiki drinks and macaroons that people used to only know.
