Coconut Grapefruit Sugar Cookies: Bright & Tropical

Do you have a favorite type of Citrus? If you hadn't guessed, mine far and away is grapefruit. I mean, I love them all, of course, they all have their place, but Grapefruit seems like it's perfect for everything.

My favorite chapstick is Grapefruit flavored, as well as my body scrub, and lotions. My favorite sorbet is grapefruit! Greyhounds are in my top three favorite cocktails, and there isn't much that you can't do with my favorite citrus.

One of the most beloved cakes we've had is this mouthwatering Coconut Grapefruit Loaf Cake, and don't even get me started on Grapefruit Margaritas!

The smell is intoxicating and refreshing and just screams Summer and Sun to me! Plus the fruit all by itself is just so darn yummy! It is one of our favorites to always have in the fruit bowl!

My mom used to always sprinkle sugar on top, and I know that a lot of people do that. But when you have realllly sweet grapefruit, there is no need, so I try not to, and even my two year old inhales them! I can't seem to scoop it out fast enough!

It only made sense to me to add a Grapefruit Cookie to my collection, and boy this one did not disappoint!

There is freshly squeezed grapefruit juice and zest made up into the cookie, then the dough is rolled in grapefruit infused sugar, if you will. I just massed a couple tablespoons of fresh grapefruit zest into some granulated sugar..it smells fantastic by the way.

These cookies are thick, soft, and chewy. The grapefruit flavor is there, but not over powering by any means. These are not overly sweet sugar cookies, but more refreshing and airy.

Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar, plus 1/3 cup for rolling
  • 3 tablespoons grapefruit zest, divided
  • 1/4 cup grapefruit juice, freshly squeezed
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened coconut flakes, roughly chopped

Directions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In the bowl of your stand mixer, cream together the butter and 1 cup of sugar.
  3. Add 1 tablespoon of the grapefruit zest and the juice. Mix.
  4. Add the egg and mix for about two minutes, being sure to scrape down the sides.
  5. Add the flour, cornstarch, baking powder, soda, and salt. Mix until almost combined.
  6. Add the coconut flakes, and by hand, stir them evenly into the dough.
  7. On a plate, add the 1/3 cup sugar and 2 tablespoons grapefruit zest. Rub together to evenly combine.
  8. Using a cookie scoop, scoop out about 1 1/2 tablespoon of dough and roll into a ball. Roll the ball in the sugar-zest mixture and place on baking sheet. Repeat with remainder of dough.
  9. Once on the baking sheet, slightly flatten the balls to take away the roundness of them.
  10. Bake for 8-10 minutes. Remove from the oven and set for 2-3 minutes before transferring to a cooling rack. Enjoy!
