Healthy Blueberry Bread for Breakfast

We simply call this amazingness "Loaf".

Yup.

Loaf.

Not so creative, huh? But what it lacks in naming it makes up for in other areas, like deliciousness! Booyah, people, booyah. That's what you'll be saying when you try this for the first time, and the second and the… ok you get the idea.

I've given it a slightly more descriptive name just for you guys, Healthy Blueberry Bread. But around here, it will forever be known as loaf.

I've made this using blueberries, raspberries, blackberries… pretty much any kind of berry that suits your fancy. And the best secret about it is - the one nobody will be able to guess about this recipe? No butter. No oil.

No one believes it after they've had a slice. Reactions pretty much go like this "NO WAY!?" The apple sauce and sour cream add to the moisture and the natural sweetness of the blueberries, plus some added sugar make it the perfect amount of sweet. As for the crumbly topping? You don't need butter to make that happen, a little oats and agave go a long way!

One thing about not using oil or butter and tons of sugar… things don't keep for as long. Never an issue around here since it's gone by day two or three. But be aware, there aren't a lot of natural or otherwise preservatives in this quick bread. After day four or five, it won't be the best.

This bad boy can be eaten for breakfast, brought as a dessert, or my personal favorite… Slice up a hunk to bring to work for my mid-morning snack time. Yes, I fully admit I'm like a 3 year old and have a mid-morning snack. Don't you?

You could always pack it for the kids for a fun lunchtime treat - whole grain, low fat, low sugar, and yet they will never know what hit them. I mean that in a good way, people.

You might notice the loaf looks a little bit short… that's what happens when you wait until the next day to take pictures. Two people plus one tasty loaf of quick bread = we'll make some quick work of that!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened apple sauce
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 1 cup frozen blueberries
  • 1/2 cup fat free sour cream
For the Topping:
  • 1/2 cup old fashioned oats
  • 2 tablespoons agave syrup

Directions

  1. Preheat oven to 350°F
  2. Mix flour, baking powder, baking soda and salt in a medium bowl, set aside. Beat together apple sauce, sugars and vanilla in a separate bowl.
  3. Beat in eggs one at a time.
  4. Add 1/3 of the dry ingredients to the wet, alternating with sour cream until everything is lightly folded together.
  5. Spray an 8.5" loaf pan with olive oil cooking spray and fill with half the batter.
  6. Sprinkle 1/2 cup blueberries followed by second half of batter.
  7. Combine agave and oats together in a small bowl until well mixed.
  8. Top with 1/2 cup blueberries and oat and agave mixture.
  9. Bake at 350°F for 55 minutes or until a toothpick poked into the center comes out clean.
