Grilled Halibut Steaks Full of Flavor

I can't believe that summer is here. It was the winter that would not end, followed by the shortest spring ever! But with summer comes grilling.

I love being able to light the grill, and have dinner be made outside. Not only does it not heat up the house, but it always seems to minimize the amount of dirty dishes. We finally have a table and chairs on our porch this year, so I see lots of dinners outside right next to the grill, enjoying the weather.

To kick off grilling season I started with a meaty piece of fresh halibut. I don't often make fish, let alone grill it, but my husband requested it. Our local grocery store has a few different fresh fish on sale each week. As soon as he saw that halibut was on special, he added it to the menu.

He doesn't often pick out dinner ideas, so when he does, I usually listen. He even picked out a recipe he wanted me to try! How could I say no? If it were up to him or my 9 year old, we would probably have fish five nights a week.

These grilled halibut steaks start off marinating in a blend of lemon and rosemary. How long you marinate is pretty much up to you. If you marinate up to an hour, you will get lots of flavor in the fish. If you are short on time, and only do 20 minutes, it will be a very subtle flavor. But squeeze a little lemon over the halibut as soon as it comes off the grill, and you will have a wonderful meal.

I was a little worried about the fish falling apart on the grill, but halibut is a sturdy piece of fish and handled it just fine. You could easily do this in a skillet, on the stove if you wanted. I served ours with my favorite Roasted Asparagus. But if you don't want to turn on the oven this BLT salad would be great as well.

A meal this light and healthy means you can totally have dessert. Maybe Tanya's lemon mascarpone grilled cheese, or Christy's pineapple angel food cake? Both are light and fresh, and pair well with the flavor profile of Erin's grilled halibut steaks.

Ingredients

  • 3 tablespoons dry white wine, or chicken broth
  • 1/4 cup lemon juice, freshly squeezed
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • salt and pepper
  • 4 halibuts, 5 ounce pieces

Directions

  1. In a shallow baking dish combine wine, lemon juice, olive oil, and rosemary.  Add Halibut, turning to coat.  Marinate for 20-60 minutes in the fridge.
  2. Heat grill over medium-high heat. 
  3. Remove fish and season with salt and pepper.  Place on grill, skin side down and cook for about 5 minutes per side, until white and flakey. 
  4. Remove and serve with fresh lemon.
