eggless orange crinkle cookies recipe with step by step photos – vegan recipe of eggless orange cookies made with whole wheat flour/atta & fresh orange juice.

these eggless cookies have a light orange flavor and taste. also they have a moist and soft texture. they are not crisp or crumbly or chewy. i had made these crinkle cookies some months back, a few days before the new year and the recipe was in drafts from then.

usually i prepare cookies with whole wheat flour or a combo of whole wheat flour + all purpose flour and gram flour/besan. these cookies too have gram flour in them. fresh orange juice is added here. but even ready orange juice works well.

the orange cookies recipe is simple and easy. i have replaced butter with olive oil. you can even make the cookies with butter. butter will give a different texture and taste than olive oil.

these eggless orange cookies go very well as a sweet treat with evening tea or coffee.

lets start step by step eggless orange crinkle cookies recipe:

1. grate the orange peel to get the orange zest. make sure to grate the orange part and not the white pith as its bitter. keep the zest aside.

2. peel and chop orange. remove the seeds. blend the chopped orange in a mixer. you can even use an electric juicer to get the orange juice.

3. strain the orange juice and collect it in a small bowl or measuring cup. press the pulp with a spoon so that all the juice gets extracted.

4. in a bowl or pan, add the orange juice, sugar and olive oil.

5. whisk till the sugar dissolves and everything has mixed well.

6. sieve the whole wheat flour, salt, corn starch, baking powder and baking soda all together directly in the bowl.

7. add the orange zest.

8. stir lightly and then add the gram flour/besan.

9. mix everything with your hands and knead to a soft dough.

10. divide the dough into 12 to 14 small shaped balls. flatten the balls and arrange them on a greased baking tray with enough space between them. don't make any designs on them as i have done, since the designs don't stay once the cookies are baked :-)

11. bake in a preheated oven for 200 degrees celsius//392 degrees fahrenheit for 20 to 25 minutes till the cookies are golden. temperatures vary from oven to oven, so the time will also vary. for baking in a microwave oven at convection mode, bake at 180 degree celsius for the same period of time.

12. when the orange cookies are done, cool them on a wire rack.

when the cookies cool down, then using a sieve, sprinkle icing sugar or castor sugar on the cookies. serve these eggless orange crinkle cookies straightaway or you can store them in an air-tight container. the recipe makes 12 to 14 cookies. these eggless orange cookies stay good for a couple of days at room temperature.
