Funfetti Blondies with a Malted Milk Twist

Fact: Life is better when sprinkles are involved.

I take every chance I get to add a splash of color to a recipe. It's hard to turn down a treat studded with vibrant flecks of colorful sugar. When I was a kid, my favorite cake was a boxed funfetti cake frosted with a tub of rainbow chip frosting. I would buy two containers of frosting, one for the cake and one for spoon dunking.

These malted milk funfetti blondies are loaded with colorful sprinkles and white chocolate chips.  Perfectly colorful and bright!

If you're running short on time, this recipe is for you. The batter comes together in one bowl and only takes 5 minutes to whip up before baking.

Blondies are brownies minus the chocolate. I know what you're thinking, "But I love chocolate." After you sink your teeth into one of these thick, dense, gooey, buttery blondies, you'll forget all about chocolate.

These aren't your average blondies. In place of the chocolate, I added a generous scoop of malted milk powder. At first bite, you'll struggle to find the malted milk, but after a few moments of munching, the unique flavor will appear from behind the scenes. It adds a delicate, slightly salty roasted milk flavor, creating the perfect balance of sweet and salty.

Ingredients

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup malted milk powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup white chocolate chips
  • 1/4 cup rainbow sprinkles

Directions

  1. Preheat oven to 350°F. Line an 8-by-8-inch square pan with parchment. Gently spray the parchment with non-stick baking spray.
  2. In a large bowl, add melted butter, brown sugar, egg, and vanilla. Whisk until smooth.
  3. Add flour, malted milk powder, baking powder, and salt to the bowl. Using a rubber spatula, stir until it is thoroughly combined (the batter will be very thick).
  4. Fold in the white chocolate chips and sprinkles.
  5. Evenly spread the mixture into the pan. Bake for 25 minutes, or until a toothpick inserted in the center comes out mostly clean.
