Just because summer is over, it doesn't mean that smoothie season has to end. Swap summer fruits for all of the warm flavors of fall with this apple cinnamon smoothie and you will be a happy camper.
I think I'm officially late on the smoothie bandwagon. It seems to have started years ago, but I just got my Blendtec earlier in Spring and it's been like, "Look out world! It's smoothie time up in here!" Yeah, that was lame, but honestly, I can't get enough of smoothies. Green or not, smoothies are here to stay.
I got so into my summer-time smoothies that I was worried that with the absence of the summer-time fruit that I would lose all of my smoothie inspiration. And to some degree, this was true. I am already missing the berries that run wild in June and July, because let's face it, I was pretty addicted to this raspberry green monster smoothie.
But seeing as I am a Fall girl through and through, I was determined to pack all of my favorite fall flavors into some healthy smoothies, to keep my smoothie cravings sated.
Who doesn't love apples? Ok, some folks might get bored with apples, but I'm telling you, when they are in season you can NOT go wrong. Last weekend, my family took one of our favorite trips to the local apple orchard (I love living in apple country!) and indulged in a several hour long apple picking, apple cider and donut buying frenzy. It made me the happiest girl in the world.
When we got home with our staggering harvest of apples, I realized that I often use apples in my smoothies, but very rarely let them shine as the star.
Fresh, seasonal apples blended with coconut milk, Greek yogurt, cinnamon, maple syrup and a handful of oats turned out to be an amazingly comforting combination. This makes a great breakfast smoothie with the yogurt and oats giving you lasting energy. The apples, cinnamon and maple syrup add that cozy feeling and flavor of fall that just can't be beat.
So, don't think that smoothies are just a Summer time treat; give Fall smoothies a try!
Apple Cinnamon Smoothie Recipe
Ingredients
- 2 apples, red, cored and roughly chopped (such as fuji)
- 2 tablespoons water
- 2 teaspoons cinnamon
- 12 ounces coconut milk, or almond milk
- 2 tbs plain greek yogurts
- 1/4 cup rolled oats
- 2 tablespoons pure maple syrup
- 1 cup ice cubes
Directions
- Place apples, water and cinnamon in a microwave safe bowl. Microwave on high for 3 minutes or until apples are soft.
- Allow apples to cool at room temperature (or chill in the refrigerator) until cool, reserving cooking liquid.
- Put cooled apples with reserved cooking liquid in the jar of a blender.
- Add coconut milk, yogurt, oats, maple syrup and ice. Blend until smooth. Enjoy!
