Breakfast BLT Sandwich

Your favorite lunch staple just got a breakfast makeover! Breakfast BLT sandwiches combine all the toast plus bacon, lettuce, and tomato goodness of a traditional BLT, plus a little fancy spread and a perfect fried egg!

When I was in high school my friends and I used to frequent this diner. It was the most amazing rendition of a greasy spoon dive with vinyl booths, weird carpet from the 70's, and a waitress named Nan who always had pens stuck in her hair. It was there that I learned the complete pleasure of a simple sandwich on toast.

There are two toasted sandwiches that top the diner charts - the club sandwich and the BLT.

I'll say that I've never been much of a fan of mayo, and when I was younger I would not touch a tomato with a ten foot pole. Aren't teenager taste buds fun?!

Ahem.

Anyways. I was always a club sandwich, hold the tomato and mayo girl. Nan loved accommodating a bunch of kids with special orders, I'm sure. I had a friend that always ordered a BLT, but with my mayo + tomato phobias, that would have been some kind of a sad, dry sandwich. I don't remember what made me do it, but one day I decided to bite the bullet and order a BLT with all the stuff I wouldn't eat.

They have topped my list of favorite sandwiches ever since, and I anxiously await fresh garden tomatoes every year to really take a great sandwich straight over the top.

But sometimes I want my awesome BLT sandwich fix first thing in the morning. So I took my over-the-top great sandwich and sent it over the moon with the addition of a fried egg and some fancy sandwich spread.

You can cook your eggs any way you'd like , but in my world the runny yolk is king and I always shoot for over medium. It adds a whole dimension of richness and flavor, and really breakfasts things up.

A traditional BLT calls for mayo, so for breakfast - for this sandwich - I can offer you three delicious options. You could opt for plain mayonnaise. You could amp it up a little and try some of this garlic dill aioli. Or you could go in what for me feels like the best breakfast direction and use a savory flavored cream cheese.

I highly recommend the cream cheese.

We know two other BLTs that could benefit from the cream cheese treatment! Tanya's avocado BLT and Christina's BLT wrap would be excellent with a little garlic and chive action.

Ingredients

  • 6 slices bacon
  • 1 egg
  • 3 slices thick bread, try a seed and grain variety
  • 2 tablespoons savory cream cheese, such as garlic and chive or garden vegetable
  • 4 slices tomato
  • 4 leaves lettuce leaves, romaine or iceberg for crunch
  • pricks frill picks, to hold your sandwich together

Directions

  1. Cook the bacon to your liking. Place it on paper towels to drain any extra grease.
  2. In a skillet, fry your egg to your preferred temperature.
  3. Toast the bread and spread one side of all 3 slices with the cream cheese (see note).
  4. Top the cream cheese on the bottom slice with 2 tomato slices, then 3 slices of bacon, then 2 leaves of lettuce.
  5. Add another slice of toast, cream cheese side up, and on top of that place your egg. Then tomatoes, lettuce, bacon, and the final slice of bread.
  6. Place frill picks at each corner to hold the sandwich together. Slice in half and serve.

Notes

  • In place of the cream cheese you could substitute mayonnaise, or you could try something for extra oomph like a garlic dill aioli.
