It is with great pleasure that I announce National Peanut Day today!

Wait – don't tell me you didn't know it was National Peanut Day. Who are you? But if you forgot (it's okay; one time I forgot National Butterscotch Pudding Day and the world didn't explode, so it's all good), there is still plenty of time to make up for it – and plenty of peanutty goodness in today's recipe to satisfy this national holiday!

I recently got the terrible news that elephants don't actually like peanuts. Um, I feel like my whole life has been a lie. How can elephants not like peanuts?! How come circusfolk told me a flat-out lie about an elephant's snack preference? It's not like I would have judged the elephant for liking lettuce or popcorn or whatever instead of peanuts. I didn't have this notion in my head thinking, that giant animal over there must like peanuts or else I will disown it in my mind. How come I trusted circusfolk? Most of them are missing teeth and have pet monkeys. The world has so many unanswered questions.

So if you're an elephant or someone who can't eat peanuts, you probably won't like this recipe. But for everyone else, this is one of the easiest cookie dough recipes ever, and is one that is sure to satisfy that sweet & salty craving we all get.

The best part? This recipe makes a small batch which definitely helps curb the IWANTALLTHECOOKIES feelings we sometimes get. Or is that just me? Anyway, it makes approximately 15 miniature balls of rich and chewy peanut butter cookie dough and they're so cute. Teeny, poppable and seriously addictive, you'll probably end up polishing off all 15, but because they're miniature, calories don't count. It's science, and I'm not circusfolk so I wouldn't lie to you!

Let's celebrate National Peanut Butter day in style! We've got gluten free peanut butter fudge balls, and healthy peanut butter cookies to cure those nutty cravings.

Ingredients

  • 1/4 cup creamy peanut butter
  • 2 tablespoons unsalted butter, room temperature
  • 1/4 cup brown sugar
  • 1 tablespoon agave syrup, or honey
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup old fashioned oats
  • 1/4 cup all-purpose flour
  • sundae peanuts, for rolling in/garnish

Directions

  1. In a large bowl, beat together the peanut butter, butter, brown sugar and agave or honey vigorously with a fork, or with a handheld electric mixer on low-speed, until just combined. Stir in the vanilla, oats, and flour until a soft dough forms.
  2. Roll the dough into teaspoon-sized balls in the palm of your hand. Gently roll the balls into the finely chopped sundae peanuts to cover. Place the garnished cookie dough balls onto a foil-lined plate or small baking sheet.
  3. Briefly freeze the dough balls for about 20 minutes or until firm. Eat up! Store leftover dough balls (which there won't be any) covered in the fridge or freezer. They also taste great at room temperature!
