Every Thanksgiving my dad insists my mom make cranberry sauce. He is the ONLY one who actually likes cranberry sauce. My mom dutifully appeases him by buying a can of cranberry sauce and dumping the whole cylindrical blob in a bowl then calls it a day.

Everyone loves Thanksgiving leftovers. We haven't even finished our meal and we start dreaming out the enormous turkey sandwiches we are going to build with the leftover turkey. Everyone wants the stuffing too. That somehow tastes even better the next day. Unfortunately there usually aren't any leftover mashed potatoes or else someone would probably be piling that on their sandwich too!

There is one leftover that always gets overlooked. That is the cranberry sauce. No one wanted it the first day, why would we want it the next? No one seems to have the heart to toss it after we've cleaned up our Thanksgiving meal. We dirty up a plastic container and set it in the fridge, knowing that we will throw it out eventually.

You know what I've done? I figured out a way to not only use up that leftover cranberry sauce, but to actually enjoy it too! You can thank me later.

This wrap is the perfect way to use up both the turkey and your cranberry sauce. I added chopped jalapeños to my sauce (doesn't matter if it's canned, homemade cranberry sauce or even spicy cranberry sauce).

A clove of garlic and pinch of cumin along with some fresh cilantro make this one spectacular sandwich spread! Feel free to adjust the heat and the seasoning. I prefer spicy food, so I used a lot of diced jalapeño. Whatever you do, don't leave it out!

Never fear leftover cranberry sauce again, my friends. In fact, after you taste this wrap you'll find yourself hiding the cranberry sauce in the fridge just so you have enough to use the next day!

Ingredients

  • 1 tablespoon jalapeño pepper, chopped
  • 1 clove garlic, minced
  • 1/8 teaspoon cumin
  • 4 tablespoons cranberry sauce
  • salt, to taste
  • 2 tablespoons goat cheese, softened
  • 7 ounces turkey breast, sliced or shredded
  • 1 cup bibb lettuce
  • 2 multigrain sandwich wraps

Directions

  1. In a bowl, stir together cranberry sauce, jalapeño, cumin, cilantro and salt to taste.
  2. Spread 1 tablespoon softened goat cheese on each wrap. Divide cranberry mixture between both sandwiches. Top each wrap with 1/2 cup lettuce and half the turkey.
  3. Cut in half and serve.
