I have always had an affinity for blue cheese. I know it's somewhat of an acquired taste. It's a taste I love. I think my love for blue cheese actually goes way back.

I grew up in a no-frills kind of household when it comes to food. My mom made everything from scratch; pizza dough, bread, yogurt - everything. I'm lucky to have grown up learning to appreciate homemade food, but unfortunately for me, my mom also did not believe in snack food! Some days I just wanted some good old-fashioned junk food you know what I mean?

Since there were no chips or pretzels to be had, I resorted to making up my own junk food. Popcorn and saltines were always around. Frequently I satisfied my salty cravings with plain saltines and pre-wrapped cheese slices. Occasionally I'd get real fancy and melt them in the oven (believe it or not, we didn't own a microwave).

It wasn't nachos by any stretch of the imagination. The cheese spread way too much and the crackers became chewy, but desperate times call for desperate measures. 

My second favorite snacking concoction was to dip plain popcorn into blue cheese dressing. Sounds weird, I know, but it was so good. How did this happen you ask? Well, after staring into the fridge for 40 minutes hoping I'd overlooked some glorious snack food just waiting for me, I spied the blue cheese dressing bottle and thought "eh, why not?" That's how popcorn dipped in blue cheese came to be. You may call in strange, I call it culinary!

My love of all things blue cheese exploded from there. Since then I've always ordered it on my salads, devoured it in dip, smeared it on bread, and served it with chicken. And now it appears as the star of this roast beef sandwich.

I used delicate croissants as the bread for this sammie. I used the small croissants that I found in the deli of my grocery store. I layered crisp Bibb lettuce; deli cut roast beef slices, fresh tomatoes and homemade blue cheese aioli. I promptly shoved two sandwiches into my mouth!

Originally I was thinking these sandwiches would make excellent party food. I quickly realized they make excellent lunches too!

That aioli is truly dreamy. It is a mixture of crème fraiche (sour cream or plain Greek yogurt could be substituted), piquant crumbled blue cheese, garlic and chives. Folks, I cannot lie, it was all I could do to stop myself from dipping popcorn into that aioli! Or worse, eating it with a spoon!

Don't try the popcorn and blue cheese; DO try these roast beef sandwiches and blue cheese!

We think these baby sandwiches are just screaming for a spot of soup on the side! Try Aimee's copycat zuppa toscana or Shaina's tomato soup.

Ingredients

For the Sandwich:
  • 4 medium croissants
  • 1 pound thick-sliced deli roast beef
  • 4 leaves bibb lettuce
  • 2 roma tomatoes, sliced
For the Aioli:
  • 4 ounces crème fraîche
  • 2 ounces blue cheese, crumbled
  • 2 cloves garlic, minced
  • pinch of salt and pepper
  • 2 tsp choppeds fresh chives

Directions

  1. In a small bowl, combine crème fraîche, blue cheese, garlic, chives and salt and pepper. Whisk well.
  2. Cut croissants in half (if not already done). Arrange lettuce on each bottom half of the croissants. Top with deli roast beef, about 2-3 slices each, depending on the thickness.
  3. Top beef with tomato slices and a generous spoonful of blue cheese aioli.
  4. Serve immediately.
