Several months ago, I posted a recipe for my classic banana bread. I was very opinionated about what belongs in banana bread. I was extremely clear on the fact that only bananas and walnuts belong in my banana bread. I pretty much said I would never enjoy banana bread any other way and I didn't even want to try something different.
Lo and behold, I made something different. This peanut butter banana bread started out as my regular old banana bread. But I was making them for Christmas gifts and I realized, plain old banana bread sounded a little boring. Too boring for gift giving. I was also out of walnuts. I'm also terrible at planning and taking stock of what's in my pantry before I make something. Oops.
Since I had already starting mixing up the dry ingredients and I had already mashed the bananas, I really needed to stick with the bread. So I searched my cabinets and decided on peanut butter chips. I had extra and I needed to save my chocolate chips for fudge since I was already cutting it close there, too.
Again, terrible planning on my part. Plus, peanut butter chips in the banana bread sounded a little bit fancy. Perfect for Christmas gifts!
So, me on my classic banana bread high horse tried the peanut butter banana bread and guess what, it was amazing. I guess some things are just as good as the original, maybe even better. The original version I made for gifts was not gluten-free. Why use up all my gluten-free flour on people who don't need it, right?!
My husband, who is gluten-free was super jealous of all those recipients of the peanut butter banana bread. Can you blame him? So much baking, nothing he could eat. So I made him his own gluten-free version and it's just as good, if not better than the regular version.

Gluten Free Peanut Butter Banana Bread Recipe
Ingredients
- 2 cups all-purpose gluten free flour
- 1 1/2 teaspoons xanthan gum
- 1/2 teaspoon baking powder
- 1 teaspoon fine sea salt
- 1 cup brown sugar
- 1 cup peanut butter chips, check labels for gluten free
- 1 egg, room temperature
- 2/3 cup milk, room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup canola oil
- 2 bananas, mashed
Directions
- Preheat oven to 350°F and spray a 9x5 inch loaf pan with non-stick spray or 5 mini loaf pans.
- In a large bowl, whisk together flour, xanthan gum, baking soda, baking powder and salt. Whisk in brown sugar and break up any clumps. Mix in peanut butter chips and set aside.
- In a medium bowl (or large measuring cup), whisk together milk, oil, egg and vanilla extract. Add the wet ingredients and mashed banana to the dry ingredients and mix until just combined.
- Transfer batter to the prepared baking pan or mini pans and bake at 350°F for 55 minutes to 1 hour for a regular sized loaf, or 35 minutes for mini loaves, or until tester comes out clean.
Notes
- This banana bread can be made with regular all-purpose flour in place of the gluten-free flour. Just be sure to omit the xanthan gum.
