Strawberry Cheese Danish

This time last year I was letting perfectly yeasted dough with just a hint of orange rise, spreading it with a cooked strawberry sauce, and some sweetened cream cheese, and rolling each piece into a fluffy dough heart. My recipe for sweetheart rolls is a labor of love, and if you have time for yeasted dough they make lovely Valentine breakfast treats.

But.

I don't always have time for kneading and rising, rolling, filling, shaping and baking. I wish I could always work everything out from scratch, but really sometimes I just can't.

So this year I decided to run with the same citrus + strawberry + cream cheesy breakfast pastry theme, while knocking off nearly all the labor. My secret?

Crescent rolls.

I know. They are kind of like the magical answer to all the bread things be it breakfast, lunch, dinner or dessert. And did you know that you can get sheets of the crescent dough minus the perforations? I love them. They make great shortcuts for so many things! And they are key to making this easy strawberry cheese Danish.

If you can't find the seamless sheets, you can just grab a regular tube of crescent rolls and gently pinch together the seams. It'll only take you an extra minute or two.

Then you quickly chop up some strawberries and sprinkle them with a little sugar, mix softened cream cheese with sugar and some lemon zest, spread it across the crescent sheet, top with the strawberries, roll it up, slice it, bake it, and BAM! Beautiful breakfast.

There are lots of great things about this strawberry cheese Danish recipe, but one of my favorite things is that it's not sooooo Valentine-ey that you couldn't say… make them in June when the strawberries are extra super perfectly sweet.

Ingredients

  • 1 8 ounce can seamless crescent dough
  • 1/2 cup chopped strawberries
  • 2 tablespoons granulated sugar, plus 1 teaspoon, divided
  • 4 ounces cream cheese, softened
  • 1 teaspoon lemon zest, or orange

Directions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease.
  2. Toss the strawberries with the 1 teaspoon of sugar and set aside.
  3. Beat together the cream cheese, 2 tablespoons granulated sugar, and lemon zest.
  4. Unroll the crescent dough sheet onto a lightly floured surface (this prevents sticking). Gently spread the cream cheese all the way to the edges of the dough. Spoon the sweetened strawberries over the cream cheese.
  5. With a long side of the dough rectangle closest to you, roll the dough away into a neatly filled log.
  6. Using a sharp knife, and with the roll seam-side down, cut the log into 12-14 slices, each about ¾" wide. Place them on the prepared baking sheet about 2" apart.
  7. Bake for 12-14 minutes. Let the Danish cool before removing from the baking sheet to serve.
