It's baaaack. Let's face it, peanut butter never left. Also, I went on a donut frenzy in the last few weeks. I really went crazy with donuts. More to come on that. 
What can I say? This was bound to happen and we both know it! There are two foods I would take with me to a desert island: peanut butter and donuts. Any kind of donut, I don't even care which.

Given the choice, I'd pick cream-filled chocolate-glazed – that's my #1 favorite donut - but I'm honestly not picky enough to care! I just want an island FULL of donuts. And, of course, peanut butter.
So I brought donuts and peanut butter together. It was only a matter of time. Plus, these include chocolate too, so they're basically the perfect food. 
I just couldn't help myself recently. I got on a donut frenzy and couldn't stop. I made four versions in one day. Uh, yeah, that's a lot of donuts. I received several new donut pans for Christmas though and I was sooo excited to experiment! Clearly it had a snowball effect. Not only was I on a serious donut bender then, but weeks later, I still have donuts on the brain.

They're a lot of fun to make though. Baked donuts are super easy and no fuss! Well, as easy as making cupcakes. If you consider cupcakes to be pretty simple, then you will enjoy making donuts!
I'm not going to try to claim that these are healthy - I know you know better than that, but since these are baked, I will suggest that they could be a lot worse! Either way, they are DEFINITELY worth the splurge.

If you wanted to cut corners on the calories, you could leave off the Reese's cups topping, but why would you want to do that? They add an extra boost of chocolate + peanut butter, and they also look kinda cute on top, right? 
These little beauties look and taste so delicious that you could probably convince people they came from a legit donut shop, but they are deceptively easy to make! 
A simple chocolate cake donut is baked, doused with a rich peanut butter glaze, and dunked in a bowl of chopped up peanut butter cups. Bam.

Ingredients

For the Donuts:
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons unsweetened cocoa powder
  • 1 egg, slightly beaten
  • 1 1/3 cups buttermilk, or sour milk
  • 2 tablespoons butter, melted
  • 1 teaspoon pure vanilla extract
For the Peanut Butter Glaze:
  • 1/4 cup creamy peanut butter
  • 1/4 cup water
  • 2 cups powdered sugar
For the Topping:
  • 1 8 ounce bag miniature reese's peanut butter cups, chopped, or just 1 cup chopped reese's cups, any size

Directions

For the Donuts:

  1. Preheat oven to 350°F.
  2. Coat 2 regular-sized donut pans with cooking spray. (Regular-sized donut pans typically have 6 cavities.)
  3. In a large bowl, combine flour, sugar, baking powder, salt, and cocoa.
  4. In another bowl, whisk together egg, buttermilk, melted butter, and vanilla.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Pour batter into a gallon-sized plastic bag, and snip off the corner of the bag.
  7. Pipe the batter into the baking pans, filling each donut cup about 3/4 full.
  8. Bake for 15-18 minutes, or until a toothpick comes out clean.
  9. Allow to cool for 5 minutes, then flip the pans over and tap the donuts out onto a wire rack. Cool completely.

For the Glaze and Topping:

  1. Spread out the chopped Reese's cups on a small plate.
  2. In a small bowl, combine peanut butter, water, and powdered sugar. Whisk until smooth. This consistency was just right so that the glaze wouldn't run off the donut, but you can thicken or thin the glaze accordingly, if needed.
  3. To glaze the donut, dunk the donut into the bowl of glaze, covering the donut about 2/3 way down. Allow the excess glaze to run off, then immediately dunk the donut into the plate of chopped Reese's cups.
  4. Place the donuts back on the wire rack to set for about 10-15 minutes before eating. Enjoy!
