As we get closer and closer to April and Easter, that usually means most of us have ham on the menu at some point, right? I know for us, we always have ham for Easter. Then, after the family heads home, we have ham for DAYS!
Each year, I typically try out a variety of recipes to use the ham with so that we do not get tired of it too fast. One that I recently tried was this Slow Cooker Ham & Bean Soup. This is such a frugal meal, plus it feeds a lot!
We had so much soup, that we actually took some to my parents too, and shared the bean wealth. I love that you can get a package of 15 Bean Soup Mix at the store to use in this, and it is very inexpensive. I like to think of this as a perfect meal if you are doing a rice and beans budget to save up or pay off certain things.
The shocking part for me with this soup is my picky eater even ate half a bowl. Say what? We just started new dinner rules with me son; he is now to eat what we eat instead of mommy feeling like a short order cook. He did really well with this one, it was probably the most skeptical I have been so far on these rules as to whether he would eat it. He really isn't a huge fan of beans.
I paired it with cornbread though, and if my kids see cornbread they are all in for the meal that evening.
I decided to soak the beans overnight, and then toss them into the slow cooker in the morning. I prepped the rest of the ingredients for the slow cooker the night before. That means in the morning, I simply drained the beans and then added them in. Once we came home that evening, we had a delicious soup on a very cold day.

Slow Cooker Ham and Bean Soup Recipe
Ingredients
- 1 package 15 bean soup, with the seasoning packet (comes in package of beans)
- 1/2 cup white onion, chopped
- 1 cup broccoli
- 1 14.5 ounce can diced tomatoes
- 32 ounces chicken broth
- 1 cup diced ham
- water
- salt and pepper, to taste
Directions
- Place the beans in a bowl, and then submerge the beans in water. Typically this is best done overnight, and then let them soak. Once they are soaked, rinse and drain them.
- In a 6-quart slow cooker, combine the soaked beans, seasoning packet, onion, broccoli, tomatoes, broth, and ham.
- Fill the slow cooker with water or additional broth up until the top or the fill line of your slow cooker.
- Cover and cook on low for 8 hours.
- Serve with additional salt, pepper and cornbread.
Notes
- Flavor can be added by adding in ham bone to the slow cooker as well, and then removing before serving.
