I have been cooking for a long time. When I try and remember one of the first things I ever cooked, English muffin pizzas come to my mind. I was probably about 10 years old. I toasted a few English muffins, spooned some jarred pizza sauce on them and covered the muffin with lots of cheese.
They went back in the oven for a few more minutes and my mini pizzas were done. They tasted good and I remember the feeling of pride I had, as I could now make my own dinner. English muffin pizzas never get old. They are often on my family's dinner rotation, especially when we have a busy night of sports and activities.
Many variations of the these easy personal pizzas can be made. Of course you could use almost anything as toppings. It can be fun to set up a toppings bar and include things such as pepperoni, mushrooms, peppers, bacon bits, olives and different types of shredded cheeses. Just make sure the toppings are in very small pieces to fit the size of a small English muffin as your pizza canvas.
When I am in a rush, these three cheese little pizzas go on our table with a side of fruit. But if my kids' friends are coming over, or it's movie night, the English muffin pizza bar is a great idea.
These pizzas cook super quickly, so make sure you don't keep them in the oven too long. We tend to like ours crispy and brown around the edges, but if you don't, they only need to be in the oven for a few minutes, or until the cheese melts. I also quickly toast the English muffins before topping them with sauce and cheese because no one likes soggy muffin pizzas.
If you are really feeling motivated, you can make homemade English muffins ahead of time for this recipe. I always keep a few batches of marinara sauce in the freezer because it is good for pizza or pasta.
I love this easy dinner, and I would not get any complaints from my family even if I made it twice a week. I like to use whole wheat English muffins and part skim cheese to raise the nutrition factor. Add some fruit or salad and you have a well- balanced meal. Better yet, make this spinach fruit salad.

English Muffin Pizzas Recipe
Ingredients
- 4 english muffins, sliced down the center
- 3/4 cup marinara sauce, or pizza sauce
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon italian seasoning, (dried)
Directions
- Preheat broiler to 400°F. Either lightly toast English muffins in a toaster or place them on a cookie sheet, cut side up, and toast them in the broiler for a few minutes.
- Spoon sauce on top of muffins. Mix all three cheeses together and top muffins with a generous serving of cheese. Sprinkle with Italian seasoning.
- Place the pizzas in the broiler for a few minutes or until the cheese is melted and bubbly. Make sure to keep an eye on them so they do not burn. Serve the pizzas warm.
