Peacamole Dip

This healthy, tasty peacamole dip is rocking my world right now. It has made afternoon snack time a breeze!

My kids come home ravenous every single day. The first words I hear out of their mouths when they walk in the door is always, "I'm hungry!" So, rather than listen to them badger me for food incessantly every afternoon, I try to have a snack prepared, ready and waiting for them when they walk in the door.

Ideally, afternoon snacks for my kids will be healthy. I want them to eat dinner later and I don't want them to fill up on sugar in the late afternoon with bed time just a couple hours away. However, when I try and serve up veggies, my kids, as you might expect, are less than excited. They like veggies of course and they aren't one to turn down a cucumber, a baby carrot, or even a piece of broccoli. Still, a cucumber isn't what they're looking for during those tummy rumbling afternoon hours.

My solution to the afternoon hunger craze is to have a tasty dip ready when the kids come home. This peacamole dip is on our daily menu right now! It's healthy, so I love it. It's delicious, so the kids love it.

Peacamole dip is essentially just guacamole with a lot of spring peas blended in. It's a double dose of veggies hidden behind the creamy smooth guacamole flavor that everyone enjoys. You can eat it with chips and crackers, use it as a dip for cut veggies, or even spread it on to a slice of toasted whole grain bread. It's really good stuff!

The trick to really good peacamole dip is to cook the peas well so that they blend smoothly. You can blend it up in a blender or food processor. I use my Blendtec and it comes out smoothly every time! I also simplify the cooking process by using my Dreamfarm Vebo – it's perfect for boiling a batch of fresh peas! 

Ingredients

  • 1 cup spring peas, fresh or frozen, avoid canned
  • 2 avocados
  • 2 tablespoons fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2-3 tablespoons salsa
  • salt, to taste

Directions

  1. In a small pot, boil the peas until they are very tender and mash easily (about 10 minutes).
  2. Drain well and place in blender or food processor. Add in the remaining ingredients and process until smooth.
  3. Add water, a teaspoon at a time, until it reaches desired consistency.
  4. Taste and adjust seasonings. Keep refrigerated for up to 3 days.
