I'm a brunch person. I know that people are sharply divided on this meal, but for me, there's no reason to turn down another excuse to eat fantastic food. If it were up to me, I'd make afternoon tea a required occurrence in the United States just so I'd have a good excuse for eating between lunch and dinner.

Brunch is the best of both worlds when it comes to menu offerings. No one thinks you're weird for wanting eggs after 10:30 AM, and it's totally legit to order a cocktail before noon. If you want pancakes and French fries, do it. French fries are just a different form of hash browns anyway.

Now, when it comes to what I order during brunch, waffles are my go-to. Though I love crispy Belgian-style waffles topped with lots of fruit and whipped cream, I can't resist it when other varieties are on the menu, which is probably why I continue to experiment with waffle flavors. Classic blueberry waffles? Spiced gingerbread waffles? Beer cheddar waffles? Yes, yes, and oh, mama.

For the next step in my waffle revolution (waffle-ution?) I wanted to go rich and warm, creating something that would be the ultimate brunch waffle when you're out with all your besties. The solution was obviously to add whiskey!

These chocolate waffles with whiskey butter sauce are going to blow everyone's socks off at your next brunch. If you prefer to entertain at night, that's cool — add some ice cream and you've got a bombshell of a dessert.

I added chocolate chips for extra melty rich flavor, but keep in mind that you might need to redistribute the chips as you pour the batter onto the waffle iron. You might find it easier to keep the chocolate chips nearby and just sprinkle them on top of the batter as you cook each waffle.

The sauce is delicious even without the whiskey, but if you prefer you can swap in a fruit-based sauce, such as raspberry, or even stick with the standard maple syrup. Take care to not turn the heat up too much and whisk often to prevent the eggs from separating and cooking. If it gets a bit clumpy, just pour the sauce through a fine mesh strainer.

Ingredients

For the Waffles:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups milk
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 4 tablespoons butter, melted and cooled
  • 1/2 cup chocolate chips
  • chopped walnuts, optional
For the Sauce:
  • 4 tablespoons butter
  • 1/3 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • pinch of salt
  • 1/2 cup half and half
  • 1 large egg
  • 1/4 cup whiskey

Directions

To Make the Waffle Batter:

  1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together milk, vanilla, and eggs until frothy. Pour mixture into dry ingredients and whisk to mix. Let rest for about 15 minutes.

To Make the Whiskey Butter Sauce:

  1. In a small saucepan, whisk together butter, sugar, vanilla, and salt over low heat, until butter is melted and sugar has dissolved.
  2. Whisk together half and half and egg in a separate bowl, then pour into butter and sugar mixture in a slow stream, whisking the entire time.
  3. Cook, whisking continuously, for about 5 minutes, until mixture has thickened but is still very pourable.
  4. Remove from heat and whisk in whiskey. Set aside until ready to use.

To Make the Waffles:

  1. Preheat your waffle maker to desired settings. Stir melted butter and chocolate chips into waffle batter until butter is incorporated.
  2. Once the waffle maker is hot, pour approximately 1/3 cup of batter into the wells, close, and cook waffle. Repeat until all batter is used.
  3. Serve waffles with whiskey butter sauce. Top with chopped walnuts, if you like.
