My other half really loves to cook, and I'm spoiled because he's really good at it. He makes a bacon burger so delicious it doesn't need a bun. There's nothing fancy about the burger, in fact it's about as simple as it gets, and I think that's why they're so well received.

I tried for years to mix a burger recipe worth bragging about. I added cheeses, spices and I even tried adding jalapeƱos, but I could never get it quite right. Sometimes I can totally throw something together and it's awesome, but there are times my kitchen adventures aren't so effortless.

One fine day, my other half walks in the back door after grilling up some burgers and handed me a plate full of beautiful, juicy burgers with beautiful grill marks. One bite and I was in burger heaven. I was impressed! Not even mad! So I guess he's the burger master in the family. I like to go low carb and wrap them in iceberg lettuce instead of a bun.

Parties with friends often turn into potlucks because most of our friends love to cook and usually want to bring something delicious when we gather at our house. Since this meatball recipe (very close to the homemade hamburger recipe) is so well liked, it's nice to work these in as an appetizer when burgers aren't going to be the main course.

A meatball sandwich on a stick, at least the way I make them, is a two bite ordeal. Using the meatball to represent the bun is a glorious idea and the burger toppings in the middle are a bonus. I'd love to try these with beer dip spread in the center, wouldn't you?

Swap out the lettuce and tomato with your own favorites. Next time I'll try wrapping mine in lettuce to represent my favorite way to eat a good burger. What would you put in your meatball sandwiches?

Ingredients

For the Meatballs:
  • 2 pounds ground beef, i like to use 1 lb. 85% lean and 1 lb. 93% lean
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon worcestershire sauce
  • 1/2 cup panko breadcrumbs
  • 1 egg
For Serving:
  • lettuce, washed and dried
  • roma tomato, fresh
  • cheese, sliced, like swiss or white cheddar
  • thousand island dressing, homemade fry sauce, or italian dressing (optional)

Directions

  1. Preheat oven to 375°F.
  2. Put ground beef in a large mixing bowl.
  3. Add pepper, salt, garlic salt, onion powder and Worcestershire sauce, sprinkling on evenly over the meat.
  4. Now measure your panko and add it to the bowl along with the egg.
  5. Combine ingredients with clean hands just until the spices are evenly incorporated.
  6. Form ground beef into balls approximately 1 1/2" wide, and place them on a baking sheet lined with foil or a baking sheet.
  7. Bake for 8 minutes, or until the edges are no longer pink and the meatballs are just cooked all the way through. Try not to overbake.
  8. After meatballs are completely cooled, slice them in half and place a tiny slice of cheese on the lower half of the meatball.
  9. To melt the cheese put the lower halves on a plate and microwave them for a few seconds until the cheese is melted.
  10. Tear off small pieces of lettuce and slice small pieces of tomato.
  11. Assemble the meatball sandwich from top to bottom with your cute toothpicks.
  12. Serve and enjoy!
