Stuffed Meatloaf

In the past, I have thought of meatloaf as a boring meal. It is good comfort food, but very traditional and not an exciting meal. But my husband loves meatloaf. When I first met him, one of his favorite meals was meatloaf stuffed with ham and cheese.

His mom always made it this way when he was a child, and it makes for a much more interesting dinner. The other night when my husband asked for his favorite meal, I came up with this quick and easy dinner. Next time I will make one for dinner and one for the freezer!

My simple advice to you when making this meatloaf is to line the baking pan with parchment paper or a baking liner. There will be no greasy pans to scrub and dinner clean up with be a breeze. While some cooks like their meatloaf in a loaf pan, I have always shaped mine in a long roll and cooked it in a flat baking pan. I find that it is very easy to stuff this way.

In this recipe, 90 percent lean ground beef was used. I like a leaner cut of meat to make meatloaf, especially when it is being stuffed with ham and cheese. Feel free to substitute either ground turkey or chicken if you do not eat beef. Of course, you can also use a turkey ham if you want the whole dinner poultry-based.

The nice thing about meatloaf is that it can be served with so many different side dishes to change up the meal. In the spring and summer, I tend to make lighter sides such as Indian fried rice, healthy potato salad or quinoa Greek salad to go with the meatloaf. When there is a chill in the air, my family loves having crock pot cheesy potatoes or cauliflower mashed potatoes.

My favorite thing about making this meatloaf is having leftovers the next day. I even like it cold! This meatloaf is great in a sandwich, and it will inspire you to make an extra loaf the night before. 

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup bread crumbs
  • 1 large egg, slightly beaten
  • 1/4 cup ketchup
  • 1 teaspoon steak seasoning, or seasoned salt
  • 4 slices gouda cheese
  • 4 slices ham, thinly sliced
  • 2 tablespoons barbecue sauce
  • 1 tablespoon dried parsley

Directions

  1. Preheat oven to 350°F.
  2. Line a baking pan with parchment paper or baking liner.
  3. In a medium size bowl, mix together beef, bread crumbs, egg, ketchup and seasoning. Mix until well combined but do not over-mix.
  4. Lay out a 15" piece of wax paper or aluminum foil. Pat out meatloaf mixture onto the paper and form a large rectangle. Leaving about 1 inch around the edges, lay out ham slices on top of meat. Top with the slices of cheese.
  5. Roll jelly roll style the long way and bring all edges together. Press all edges in so there is no ham or cheese sticking out of the sides.
  6. Place the loaf seam- side down onto the lined baking sheet. Drizzle barbecue sauce over the meatloaf and sprinkle with parsley.
  7. Bake for 50 minutes to one hour or until juices run clear and meatloaf is cooked through. Let cool for 10 minutes before slicing into serving pieces.
