One of the harder things about paleo eating is condiments. The store-bought stuff is full of questionable ingredients - sugars, fake sugars, canola oil, and preservatives like whoa. Even if you can find paleo-friendly condiments in a store, you are going to end up paying 3 or 4 times what you would pay for the regular stuff. 

Can we talk about how annoying it is to be craving a delicious paleo-friendly hot dog and have nothing to put on it? Or being at a barbecue and eating a plain burger? The. Worst.

But good news! Paleo mayonnaise is SO easy to make and I am almost positive that you have all (or almost all) the ingredients in your pantry!  An egg yolk, salt, dijon mustard, lemon juice, vinegar, and avocado oil are all you need. And big muscles because you are going to be whisking like crazy!

I make a batch of this mayo every Sunday evening so that we have it for the week and my husband and I  put it on pretty much  everything we eat.

My husband is absolutely crazy about this stuff and would eat it with a spoon if I let him. We make tuna salad, we spread it on paleo English muffins for sandwiches, it gets used in my paleo deviled eggs, and sometimes we whisk in a ton of herbs and spices to make sauces for grilled chicken or meat.

Seriously, it is so versatile. And once you've made it a couple times, it will take you no time at all to whip up.

Avocado oil is not the easiest to find, but I've seen it at Target and health food stores should always have it. If all else fails, Amazon definitely has it.

This mayo will stay good in the refrigerator for up to a week but if your house is anything like mine, it will all be eaten before then! 

Ingredients

  • 1 large egg yolk, at room temperature
  • 1/4 teaspoon salt
  • 1/4 teaspoon dijon mustard
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon white vinegar
  • 3/4 cup avocado oil

Directions

  1. Put all ingredients except avocado oil in a large bowl and whisk until combined.
  2. Slowly stream in 1/2 cup avocado oil, whisking vigorously the entire time.
  3. Add in the remaining 1/4 cup avocado oil and whisk to emulsify completely.
