Autumn Pimm's Cup

I've been having a moment with Pimm's lately and by moment, I mean one that's lasted the last six months or so. I came late to Pimm's loving game, as I do with most things. For whatever reason, in my mind, I thought Pimm's has a sassafras aka root beer taste to it, and since I've never been a root beer fan, I assumed off the bat that I wouldn't like the drink.

Of course, you know what they say about people who make assumptions right? That's right! So when a friend offered a sip of her Pimm's Cup cocktail while out one night, I took it.  One could say that assumption phrase was right about me at that point, but I'll just say that I fell in love right there in then.

A bottle was soon retrieved and now I'm trying to put Pimm's in just about everything, like this Autumn Pimm's Cup today.

If you aren't familiar with Pimm's No.1, it's a spiced liqueur with gin as its base. You'll most commonly find it all over Britain, but the popularity of the liqueur and the most common cocktail, the Pimm's Cup, has made its way across the pond to us in the U.S.

Gently spiced with citrus undertones, it's perfectly refreshing and really makes the perfect summer drink. There used to be many versions of the liqueur, but they were eventually phased out (hence the No.1 in the title).

So while there's no reason why you can't continue to enjoy the classic cocktail all year round, I thought a little autumn version was due. Mixed with apple cider, rye whiskey and ginger-infused simple syrup, my Autumn Pimm's Cup tastes like a cool fall night with leaves bristling in the wind. I added an extra garnish of rosemary to help us get into the autumn and cooler weather spirits as well but that one is completely optional.

Autumn Pimm's Cup Recipe

Ingredients

For the Ginger Simple Syrup:
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 piece fresh ginger, (2 inches in length), sliced
For the Cocktail:
  • 3 ounces apple cider
  • 1 1/2 ounces pimm's no.1 liqueur
  • 1 ounce rye whiskey
  • 1/2 ounce ginger simple syrup
  • ice cubes
  • apple slices and rosemary, for garnish
