This quick and easy red cabbage salad is a good solution for you if you would like to eat healthier, but don't have time to make complicated dishes. I used to make this salad in the morning before going to work and I store it in a Mason jar. By doing it this way you can preserve your salad much longer and it is also very convenient to carry. I bring a fork with me and I eat my salad directly from the Mason jar.
I also make this salad when I just want to have a lighter side dish for dinner, because I actually don't feel very well if I eat heavy food in the evening. This is perfect with some roast meat, chicken, or even a fish like salmon.

Every time you see cabbage that has puffy leaves, believe me they are not very good for making fresh salads.

You just need to strip off some leaves, wash them very well, cut it into quarters and then slice, chop, or shred finely. After that your cabbage will be ready to go with any type of salad.
I love combining cabbage with romaine. I just think this is a perfect combination, especially when you add some tomatoes and radishes too. I think the best way to eat cabbage is raw because you can preserve all the rich nutrients this veggie has to offer. You just need to make sure to slice it very finely as I mentioned before. Quick Easy Red Cabbage Salad Recipe
Ingredients
- 3 cups red cabbage, thinly sliced
- 2 cups romaine lettuce, thinly sliced
- 1/2 cup cherry tomatoes
- 1/2 cup slices radishes, sliced
- 1/2 cup homemade vinaigrette dressing
Directions
- In a large salad bowl, add red cabbage, romaine, cherry tomatoes and radish. Top the salad with the dressing. Using salad tongs, mix until evenly dressed.
