When I first got married, my aunt sent me a package with several recipe cards in it, of her favorite family recipes - that she made over the years. At the time, I rarely cooked, very rarely! Even when I got married I hardly cooked, that's what led me to the blog that I have now.
Now, 10 years later, I cook all the time. I can barely remember life before cooking because now, it is such a huge part of my life! Sadly, those recipe cards she gave me basically sat idle for years because I never cooked.
Once I started my blog, one of the first things I did was pick up those recipe cards and finally make the recipes that she sent me. I made every single one of them and regretted that I waited so long. They were all very simple and absolutely delicious. Now, years later, those recipes are some of the favorites that my family enjoys regularly.
The best part now that I cook frequently, is that I've learned to adapt those basic recipes and turn them into new recipes to mix things up a bit for my family. One of our favorite dinners is my aunt's oven fried chicken recipe.
This was so simple; the first time I made it I was completely beside myself that I hadn't tried it before! What was I thinking? Honestly, when I first made her oven fried chicken recipe many years ago, that was probably the first time I had even picked up a whole chicken fryer at the store. Yes, it's true!
Since we use this recipe frequently on our menu plan, I like to mix it up now and then, adding in new seasonings. One of our favorites is a mix of ranch seasoning, along with corn meal. I love that this is gluten free, and a little bit better for you than traditional fried chicken too! There is no oil needed at all, just dry ingredients and chicken.

Gluten Free Oven Fried Chicken Recipe
Ingredients
- 2 1/2 pounds broiler-fryer chicken, cut
- 1/2 cup gluten free cornmeal
- 1 package dry ranch seasoning mix
- 1/2 cup all-purpose gluten free flour, or all purpose flour if not cooking gluten free
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- cooking spray
Directions
- Preheat the oven to 425°F.
- Spray a 13x9x2 pan with cooking spray.
- Mix the cornmeal, ranch seasoning, flour, salt, paprika, and pepper in a medium sized bowl.
- Take each piece of chicken and coat it with the mixture.
- Shake off the excess.
- Place the chicken skin-side down on the baking dish.
- Bake for 30 minutes uncovered, then turn the chicken carefully and bake an additional 30 minutes or until well done.
