I have a love/hate relationship with the Kardashians.
I've hesitated in revealing this to you. It's an ugly little secret that I've been embarrassed to discuss. But what I know is this – deep down, in places that you don't like to talk about at parties, you want me caring about the Kardashians. You NEED me caring about the Kardashians.
Okay sorry. Got a little drama llama there. Oopsie.
The thing is, I really DON'T care about the Kardashians. I scroll through Facebook and see yet ANOTHER article about Kylie's lips or Kim's baby and I roll my eyes. Hello, there are REAL CRISES IN THE WORLD. NOBODY CARES, US WEEKLY!!
But then it starts. That little nagging feeling. Kylie does have nice lips, in a weird, fake, disturbing kind of a way. And Kim DOES make cute babies, even if her pregnancies are exploited to the point that I nearly vomit every time I see a caption about how "difficult" her pregnancy has been. HOMEGIRL FLIES AROUND IN A PRIVATE JET. Unlike me, who was once pregnant and stranded on a runway for 2 hours, drinking tepid water and sweating profusely in places that I'd prefer not to mention.
So I click over to the article. Just a quick peek, really. So I can see what the latest ridiculous nonsense is and I can make fun of them. But then it happens –"SCOTT DISICK DID WHAT TO KOURTNEY?!?! Oh HAIL NO."
I start feeling real, actual feelings. It's frightening and upsetting and slightly pleasurable, all at once.
A couple of months ago, I came across a video Khloe Kardashian made about how she fills her cookie jars. She buys inexpensive glass cookie jars at Target, then stacks her cookies neatly around the perimeter. It's ridiculous, time consuming, and completely pointless. So of course, I had to try it.
It's adorable, if I do say so. Something about those neat stacks makes regular Oreos and Nutter Butters seem so much more enticing. I've been trying different cookies in my jars each month, and one of our favorites has been Fudge Stripes.
So I did the obvious thing and made my own from scratch. Take notes, Khloe. Take notes.
Homemade Fudge Stripe Cookies Recipe
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup salted butter, at room temperature
- 3/4 cup powdered sugar
- 2 teaspoons pure vanilla extract
- 12 ounces dark chocolate, melted
Directions
For the Cookies:
- Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
- In a medium bowl, combine flour and baking powder; set aside.
- In the bowl of your mixer, beat butter and sugar on medium speed until fluffy, about 2 minutes.
- With the mixer on low speed, slowly add flour mixture, stopping to scrape the sides of the bowl until a soft dough forms.
- Turn dough onto a floured board and roll to 1/4-inch thickness.
- Cut with a roughly 3-inch circle cutter, then cut out the center with a 1/2-inch circle, to form a donut shape.
- Place cookies on prepared baking sheets, 2 inches apart. Bake for 10-15 minutes until edges are just barely golden brown.
- Let cookies cool on sheets for 5 minutes before removing to wire rack to cool completely.
For the Fudge Stripes and Bottoms:
- Spread wax paper on your countertop. Dip bottoms of cookies in melted dark chocolate, allowing excess to drip off before placing on wax paper.
- Pour remaining melted chocolate into a re-sealable sandwich bag with a corner snipped off and pipe stripes on the cookies.
- Let chocolate firm up before serving cookies.
