Do you ever wish you could live back in the olden days before things like social media and texting existed?

Obviously I'd still want to have my iPhone because its soothing weight in my hand is like balm to my soul. But I'd happily live in a land where I didn't know every thought that went through everyone's mind.

There are just some things that we aren't meant to see or know about each other. Unless it's cute photos of your cat or new baby, because those honestly never get old. Sometimes people are all, "Sorry for bombarding you with photos from our newborn shoot" and I'm like "ARE YOU EVEN KIDDING ME?! THIS IS SO MUCH BETTER THAN THE ELECTION!"

Chubby baby arms and slobbery smiles will save any day. Also? Cookies.

There is never a bad time for a cookie. Unless you are on a diet, in which case I have to say that I am sorry for being a terrible friend. I will never support you on a diet. Life is short, depravity is unnecessarily cruel, and humans are meant to eat cookies. If we weren't, they wouldn't look so fun and happy. Like little discs from heaven.

I've seen birthday cake cookies floating around the internet, and while they look quite delicious, they seem to be lacking the one thing that could make them better — chocolate.

So here they are — chewy, FUDGY cookies that are happy and party-ready. A bit of cake mix gives them that "birthday cake" flavor and fun mix-ins make them feel like a celebration. Feel free to smear on a bit of buttercream or a drizzle of glaze. More is more, if you ask me.

Chocolate Birthday Cake Cookies Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup chocolate cake mix
  • 3/4 cup unsweetened cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 2 sticks salted butter, slightly softened
  • 2/3 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup miniature m&m's candies
  • 1/2 cup chocolate chips
  • 1 1/2 cups rainbow nonpareils, or any chocolate candy of your choosing

Directions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
  2. In a medium bowl, combine flour, cake mix, cocoa powder, cornstarch, and baking soda. Set aside.
  3. In the bowl of your mixer, beat butter and sugars on medium speed until light and fluffy, about 2 minutes. Add eggs, one at a time, until combined, scraping the sides of the bowl as needed. Mix in vanilla extract. With the mixer on medium-low speed, slowly add the flour mixture, scraping the sides of the bowl as needed until combined. Fold in chips and candies.
  4. Using a large cookie scoop, scoop cookies onto prepared baking sheets. Bake for 10 minutes or until edges are set and centers look slightly undercooked. Let cool on baking sheets for 5 minutes before removing to a wire rack to cool completely.
