You guys might have figured it out by now, but I am overnight oats obsessed, and these gluten free oatmeal raisin overnight oats are no exception. I thought about naming these oatmeal cookie overnight oats because they taste JUST like them, but decided to stick with oatmeal raisin.

Boring? Maybe… But taste wise, these are anything but boring. I normally use honey to sweeten my overnight oats, but I chose to stick with the oatmeal cookie theme here and use brown sugar. Let me just say – best decision ever.

The brown sugar is what really makes these oatmeal raisin overnight oats outstanding. I can't even describe it – they're not overly sweet but they're sweet enough and that little extra depth of flavor it brings is like, whoa.

And let's not forget about those raisins. I am a raisin loving freak. Ok, maybe not freak, but I really do like them. Soak them in brown sugar sweetened milk all night and you have got yourself some top-notch raisins.

These get unbelievably plump and they're SO juicy and sweet the next morning. Ohemgee they are good. Brown sugar soaked raisins are something I need more of in my life.

These definitely rival my chunky monkey overnight oats and my Nutella overnight oats for the top spot. And can we just give a quick little Amen to those Nutella overnight oats? I don't want to brag or anything, but they're kind of genius. Way better than Nutella on a piece of toast for breakfast IMO.

Overnight oats are a great easy breakfast you can make ahead of time because less prep in the morning is ALWAYS a good thing. Just mix it up the night before when you're making dinner and you've got yourself a tasty breakfast waiting for you the next morning.

It's like killing two birds with one stone – making breakfast and dinner at the same time. You can go ahead and check off "being more efficient" for your 2017 goals. Done and done. Enjoy!

Gluten Free Oatmeal Raisin Overnight Oats Recipe

Ingredients

  • 1 cup gluten free old fashioned oats
  • 2 teaspoons chia seeds
  • 2 tablespoons brown sugar, or coconut sugar
  • pinch of salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup raisins, plus more for serving
  • 1 cup milk of choice, like dairy 1% or unsweetened coconut
  • chopped walnuts, for garnish, optional

Directions

  1. Stir together the oats, chia seeds, brown sugar, salt, and cinnamon until combined – break up any brown sugar lumps if necessary.
  2. Stir in the raisins and then add the milk. Mix until completely combined.
  3. Portion into 2 servings if desired, or just cover and refrigerate.
  4. Refrigerate overnight or up to 4 days.
  5. To serve, top with additional raisins and some chopped walnuts if desired.
