Cheers! You've almost made it to the end of the year! If you ask me, you deserve a drink! Dust off those champagne flutes and ring in 2017 with a little bubbly. Something that's extra special, a little fruity, floral and tingly to the senses and just the way to say goodbye to another year. This year has had its high points and low points. We could sit and discuss the merits of each, but instead let's look to the future and clink our glasses for what's to come. There's enough to fuss about during the holidays and what I'm drinking is not going to be one of them. As simple as it is to pop open a bottle of champagne, it's just as easy to mix up this St. Germain and Pomegranate Champagne Cocktail. All it takes is three ingredients - technically four - but that's after you make the pomegranate syrup for a cocktail that makes your evening just a little more special. If you aren't familiar with St. Germain, it's a French liqueur made up from elderflower buds with a bright, floral and fragrant flavor. While it can be used in a variety of cocktails, it is beautifully paired with sparkling wine or champagne. For this cocktail I added a splash of the St. Germain and a homemade pomegranate syrup for a touch of sweetness. The syrup, which is technically homemade grenadine, takes a bit of time to reduce down but can be prepared in advance and is ready to go to serve party guests or store for future use in your refrigerator! Raise your glasses and clink-clink to the new year Ingredients For the Pomegranate Syrup: - 2 cups pomegranate juice, 100%
- 3/4 cup granulated sugar
For the Cocktail: - 1 1/2 ounces st. germain
- 1 ounce pomegranate syrup
- brut champagne, or sparkling wine, chilled
- fresh pomegranate arils, for garnish
Directions - In a medium saucepan over medium heat combine the pomegranate juice and sugar.
- Bring to a boil and reduce by half to 1 cup. Takes about 30-35 minutes.
- Cool fully and transfer to a glass container to chill in the refrigerator. Store for up to 2 weeks.
For the Cocktail: - Fill a champagne flute with pomegranate arils, 1 ounce of pomegranate syrup, 1 1/2 ounces of St. Germain and top with champagne.
- Serve immediately.
