Some weeks it is hit or miss with the treats I make around here. Sometimes my crazy dessert ideas work the first time, and then others need a few tweaks before they turn out. Every once in a while, an idea totally doesn't work, so it gets thrown out. We won't talk about those ones. On days that a baking disaster happens, I usually go work out or go shopping because either one works to lift my spirits. One just usually costs a little more. Let's talk about the hungry teenagers that live in the house with us. As little kids, they usually ate whatever we bought or made. Thankfully we never had to deal with picky eaters. Then they grew up and decided they wanted to have an opinion on what they ate. Our youngest would seriously live on ramen if we let him. They are my biggest fans AND my biggest critics when it comes to the recipes I create. They tell you how it is right away. There is no sugar coating when they share their opinion. Recipes are always a hit or miss with them too. A few months ago I made these cinnamon sugar apple donut holes, and all three kids went crazy over them. That plate of donuts disappeared almost as soon as they walked in the door from school. Fast forward to last week when I decided to make another version of those mini donuts because I love surprising our kids with snacks. I had a jar of blueberry preserves that needed used up, so I decided to do a donut hole with a surprise filling. Of course, a coating of butter and sugar was a must. One bite and I was in love. The soft donut, the blueberry pocket, and the cinnamon sugar crunch worked together so well! If you can't find the blueberry preserves in your stores, you could also make this homemade honey blueberry sauce using frozen wild blueberries, or the Blueberry Jelly recipe here on Food Fanatic. I couldn't wait for the kids to get home and have their snack. Would you believe that only my oldest liked these blueberry jelly filled donut holes? The other two snubbed their nose at the blueberry center. My daughter wanted to know why I would fill them with fruit? Silly girl, there was fruit in the other ones that you loved. She said next time to just use chocolate. Ok, so she is definitely on to something there. I'm sure I can accommodate her wishes soon. But I still have preserves to use up, so I think another batch of these donut holes will be happening first. Ingredients - 1 cup All-Purpose Flour
- 3/4 cup Granulated Sugar, divided
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 Egg
- 1/4 cup Oil
- 1/2 cup Sour Cream
- 1 teaspoon Pure Vanilla Extract
- 1/4 cup Blueberry Preserves
- 6 tablespoons Butter, melted
- 4 teaspoons Cinnamon
Directions - Preheat the oven to 400°F. Spray 2 – 12 count mini muffin tins with nonstick spray.
- Stir together the flour, 1/2 cup sugar, baking powder, baking soda, and salt.
- Create a well in the center and add the egg, oil, sour cream, and vanilla. Mix together gently.
- Spoon one teaspoon batter into the bottom of the prepared muffin tins.
- Place a small spoonful of the blueberry preserves in the center of the batter.
- Use the remaining batter to cover the preserves.
- Bake for 10 minutes.
- Let cool in the pans for 2 minutes before gently removing them and placing them on a wire rack to cool completely.
- Stir together the remaining sugar and cinnamon.
- Dip the donut holes in the melted butter and roll in the sugar mixture. Let set.
