Ingredients - 1/2 tablespoon Unsalted Butter
- 1 1/2 cups Fresh Blueberries, or frozen blueberries
- 3 tablespoons Honey, (OR 2 tablespoons brown sugar), plus a little more to drizzle over the finished oatmeal
- 1 teaspoon Cinnamon
- 1/4 teaspoon Ground Ginger
- 1/4 teaspoon Ground Nutmeg
- pinch of Salt
- 2 cups Water
- 1 cup Old Fashioned Oats, (use certified gluten free oats to make this recipe gluten free)
For Serving: - dash of Salt
- 1/4 cup Cream, or milk
Directions - In a medium saucepan, melt the butter over medium high heat.
- Add the blueberries, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the blueberries are softened. (see note)
- Pour in the water to a boil and then reduce the heat to simmer. Gently stir in the oats. If the water starts to bubble over, reduce the heat even further. Cook for about 4 minutes, stirring occasionally.
- Stir in the dash of salt, and scrape the oatmeal into two bowls. Stir in the cream and serve warm.
Notes - If you use FRESH blueberries, reduce the initial cook time to just 1 minute before adding the water.
