Cilantro Tomato Avocado Salad

Cilantro Tomato Avocado Salad Recipe

Ingredients

  • 1 pound Roma Tomato, diced
  • 2 medium Ripe Avocados, diced
  • 1/4 cup Sliced Red Onion, about 1/4 a medium size onion
  • 1/2 bunch Fresh Cilantro, chopped, approximately 1/4 cup
  • 1 clove Garlic, minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Fresh Lime Juice
  • 1/4 teaspoon Ground Black Pepper
  • 1/4 teaspoon Salt
For Topping:
  • Crumbled Queso Fresco

Directions

  1. In a large mixing bowl add all of the ingredients, except the queso fresco. Stir until combined. 
  2. Chill in the refrigerator for about 30 minutes to let the flavors blend. 
  3. Top with the crumbled queso fresco. Serve immediately and enjoy!

Strawberry Pimm’s Slush

Strawberry Pimm's Slush Recipe

Ingredients

  • 16 ounces Frozen Strawberries
  • 1 cup Pimm's No.1 Liqueur
  • 3/4 cup Lemon Lime Soda
  • 1 Lemon, juiced
For Garnish:
  • Strawberries
  • Fresh Mint

Directions

  1. Place the frozen strawberries, Pimm's, soda and lemon juice in a blend. Blend until the strawberries are pureed.
  2. Pour in a medium pitcher or divide between 4 glasses. Garnish with a strawberry half and sprigs of mint before serving.
