Best Fish Recipe Ever – Caprese Style Grilled Cod Rolls

The winning recipe in our "Best Fish Recipe Ever" contest is healthy, fresh, colorful and oh-so easy to make!  With only 6 simple ingredients you can create these gorgeous "Caprese Style Grilled Cod Rolls."   I think they are the perfect recipe for firing up the grill this holiday weekend!  Round of applause to "RoxieChan" on her winning recipe.

One of the things that makes this recipe so smart is taking one ingredient and using it in two ways.  In the grocery store you might have seen the containers of fresh mozzarella balls.  They come in a variety of sizes and are often floating in water to keep them moist.  Some also come in their own olive oil and herb marinade.  In this recipe, Roxanne not only uses the marinated mozzarella balls, she also uses the herbed oil inside the container.  Instead of making your own marinate for the fish and vegetables, simply use what's already there in front of you!

After marinating, the cod and green peppers on skewered on to one stick, and cherry tomatoes and the mozzarella are on the other.  Toss them both on the grill and warm up the hoagie roll as well.

When you are ready to serve, spread some prepared pesto sauce over the buns and fill with the grilled cod, peppers, tomatoes and mozzarella.  You can garnish with a bit of basil or lemon zest to added flair.

That's it!  The fresh and easy sandwich can be prepared and enjoyed in the same about of time it would take to toss a burger on the grill.  It will certainly be on my Memorial Day menu this weekend!
