Baby Back Ribs

Grab a pile of napkins and get ready for some sticky fingers.  We're making ribs!

I love throwing a few slabs of baby back ribs on the grill, slicing them up and serving family style.  Pass a basket filled with warm homemade buttermilk biscuits and it's a little slice of summertime heaven.

I choose to share this recipe today because in just over a week I will head on out to the east coast for the fourth annual "Big Summer Potluck."  It is a gathering of food bloggers to come together as a community and bond over our collective love for food.

I knew I wanted to do something seasonal and on the grill.  The sweetness of the apple butter made the perfect base for a homemade bbq sauce.  Balanced out with some Musselman's Apple Cider Vinegar, this sauce is easy to prepare and may soon become your new go-to favorite!

Then I decided that baby back ribs needed to be the vehicle for this Apple Butter BBQ Sauce.  After all, a slab of ribs is made for sharing.  The very spirit of the Big Summer Potluck!

For tender, fall-off the-bone ribs, I like to start them off in the oven, wrapped in foil, for about and hour and a half.  While the ribs are in the oven, I simmer the bbq sauce on the stovetop.   Then I take about 3/4 cup of the sauce and marinate the ribs.  They can sit for as little as 1 or 2 hours, or can even be wrapped and marinate overnight.  (A great solution if you are entertaining and want to get ahead of the game for a party!)

Then, simply grill the ribs while basting the slabs with the remaining bbq sauce.  The apple butter makes the ribs sticky, sweet and lick-your-fingers good!  Save a little from the jar, because Musselman's Apple Butter also just happens to taste great smothered on a warm buttermilk biscuit.
