Recipe: Key Lime Pie S'mores

To be honest, I have not been the greatest cheerleader of S'mores. The texture throws me off: hot gooey marshmallows, crunchy graham crackers, and a hard piece of chocolate. The whole thing tends to fall apart in your hands. And yet I can't deny the nostalgic fondness people have for this sticky treat, and when my sister asked for a backyard S'mores birthday party, I decided to find a S'more combination that would be more to my taste. This key lime pie S'more was my own personal smash hit of the evening.  

Recipe: Key Lime Pie S'mores

I was inspired by a Lemon Meringue S'more I saw recently (on Pinterest, naturally; see it here in a Delicious Links roundup). Lime seemed like an even better fit, with its tartness setting off the sweetness of the marshmallow, and its nod to the classic Key lime pie. 

So one of the signature S'mores of the backyard birthday party was this Key lime S'more, made just of toasted marshmallow with Key lime curd, and two graham crackers. I loved it more than any other S'more I've had. The intensely tart flavor of the store-bought lime curd balanced that sweet sugar bomb of the marshmallow much better than chocolate, in my opinion, especially when the marshmallows were toasted into submission. I like mine pretty charred around the edges, and I fall firmly into the camp that believes a standard S'more requires two marshmallows, instead of a paltry single puff. 

Simple and easy — do you really need a recipe? I'll give you one, just for the heck of it, but it's a S'more! What more do you need to know? 

One practical note: You certainly don't need a campfire to enjoy these for dessert. I toasted marshmallows one night over the gas burners on the stove. This works so well — give it a try if you're craving a S'more tonight. 

Recipe: Key Lime Pie S'mores

Key Lime Pie S'mores

Makes 6 

6 whole graham crackers, broken into square halves
3/4 cup Key lime curd or pie filling
12 marshmallows

Spread the half of the graham crackers with a thick layer of lime curd (about 2 tablespoons apiece). Toast the marshmallows until they are slightly blackened on the outside and soft inside. Smear the marshmallows on the other half of the graham crackers. Sandwich and eat immediately.
