Homemade Vitatop Muffins: Decadently Chocolate and Healthy

I ate Chocolate Chunk VitaTop Muffins like it was my job when I was pregnant. And I mean like a full-time, 40-hours-a-week-plus-overtime kind of job.

Oh, how I was very good at that job! Easily a gold-star employee.

If only I had been actually paid to eat chocolate chunk muffins that would have really been ideal. Instead, I was paying a pretty penny for 6 muffins to a box! Yikes!

So what makes these muffins so great? What's the attraction? Why pay the price for 6 little muffin tops? I suppose it all comes down to the feeling of eating something chocolate and decadent, but something with health benefits.

The muffin tops are low calorie, low fat, and chock full of healthful ingredients. Seems like an impossible combination to recreate at home, right?

Not so! Although I was a little skeptical at the start of the recipe, a few tweaks resulted in a delicious chocolate chunk muffin that's just as delicious and healthful as the store bought version.

Ingredients

  • 1 3/4 cups oat bran
  • 3 egg whites
  • 3/4 cup unsweetened cocoa powder
  • 1 apple, peeled and diced (about 1/2 cup)
  • 1 teaspoon vanilla extract
  • 1/2 cup nonfat vanilla yogurt
  • 1/2 teaspoon cream of tartar
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup water, hot
  • 1/2 cup splenda, or sugar
  • 1 cup semisweet chocolate chips

Directions

  1. Place all ingredients, excluding chocolate chips, into the blender and blend for 2-3 minutes until completely smooth.
  2. Grease a muffin tin and pour 1/4 cup batter into each cup. Top each cup-full of batter with a tablespoon of chocolate chips.
  3. Bake at 350°F for 15 minutes, until an inserted toothpicks comes out clean.
  4. Remove to a wire rack to cool (use a small spatula to loosen muffins from the tin if necessary).
